no= not complicated, an easy recipe:
Pumpkin Soup
2 tablespoons Unsalted butter
1 medium Onion; roughly diced
4 cups Pureed pumpkin (canned or fresh)
3 quarts Chicken stock or low-sodium chicken broth
1 teaspoon Salt
1 teaspoon Ground coriander
1/2 teaspoon Curry powder
1/2 teaspoon White pepper
3 cups Milk and/or whipping cream
1/3 cup Walnut oil
Melt butter over medium heat!. Add the onion and cook, stirring occasionally, until onion softens, about 10 minutes!. Add the pumpkin and salt and continue to cook, stirring, another 15 minutes for fresh pumpkin, 5 minutes for canned!. Add the stock, salt, coriander, curry and pepper!. Cover, increase heat to high and bring to a boil!. Reduce heat to low and simmer 15 minutes!. Remove from heat and place in a food processor or blender and puree until smooth!. Combine puree, milk and walnut oil!. Cover, bring to the boil and cook 2 minutes!. Serve piping hot!.

950g Pumpkin, cut into chunks
2 onions, chopped
4 vegetable stock cubes, dissolved in 1 litre (4 cups) of hot water
Heat a large saucepan over medium heat!. Spray with oil!. Add onion and cook, stirring for about 5 minutes or until softened, but not browned!.
Add pumpkin and stock!. Bring to the boil!. Reduce heat to low, cover and simmer for about 25 minutes or until vegetables are tender!.
Transfer mixture to the bowl of food processor or blender and blend until smooth!. Return soup to saucepan over low heat!. Reheat until hot!. Season to taste with salt and pepper!.
Ladle soup into bowls!. Serve with yoghurt, a few fresh chives and freshly ground black pepper!.
Or you could make it with milk!. Same as above, when the mixture has been processed and then returned to the pan add 150ml (3/4 cup) of milk, can use skimmed if you like!. Reheat until hot and same as above again!. Www@FoodAQ@Com

Ingredients
1/4 cup butter or margarine
1 large onion, chopped
1 leek, chopped
1 pound canned or homemade pumpkin puree
5 cups chicken broth
1/4 teaspoon white pepper
1 teaspoon salt
1/2 teaspoon curry powder
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 bay leaf
1 cup half-and-half
1 cup sour cream
1/2 cup chopped chives
Serves / Yields
6-8 servings
Preparation Instructions
Melt butter in medium saucepan!. Add onion and leek!. Saute until tender!. Stir in pumpkin puree, chicken broth, pepper, salt, curry powder, nutmeg, ginger, and bay leaf!. Bring to a boil; reduce heat!. Simmer for 15 minutes!. Remove bay leaf!. Puree soup mixture in blender or food processor!. Return to saucepan!. Add half-and-half!. Soup may be served at this point or refrigerated or frozen!. Serve hot or cold!. Top with a dollop of sour cream!. Sprinkle with chives!.
Helpful Hints
Serving suggestion: Hollow out a pumpkin and fill it with soup!. Heat at 350 degrees for 45 minutes and serve from the pumpkin
Note: To prepare a pumpkin puree, cut a fresh 3-pound pumpkin into cubes!. Combine cubes with water to cover in a saucepan!. Bring to a boil; reduce heat!. Simmer, covered, for 20 minutes or until fork-tender!. Drain and press through a sieve!.
