Eggplant slices, salted then grilled till crisp!. Red capsicum grilled till blistered black, then peeled and sliced, Mix up the red capsicum slices in a frying pan with cooked tomatoes, put the eggplant on a plate and bung on the tomatoes and capsicum!. Nothing to it!. I adore eggplant slices and there's nothing easier to prepare - it's just a matter of chopping up vegetables!. Although i may fry up a chopped up chicken thigh fillet along with the tomato mix!. Haven't decided yet!.Www@FoodAQ@Com
