Roti Bread

This is a very basic recipe for the famous Indian bread, 'ROTI'!.

You can mix flavorings (savoury) in the flour and suit your taste!.

Notice there is no sugar, yeast or butter!. It is very healthy and can be used for a roll-up meal!.

All purpose or wholemeal flour 500 gm
salt a pinch
Water 2 cups or so

Mix flour and salt nicely!.
Add water, little by little and form in to a semi soft dough!.
Keep aside for 15 minutes for leavening, cover the dough with a moist cloth!.
Knead a little more(2 minutes)
Make egg-sized balls!.
Flatten and roll on dry flour with a rolling pin; it should be 4-5 mm thick and round in shape!.
Cook in a pan or griddle until a little brown on both sides!.(Keep turning)
Enjoy hot with curries or gravies, make roll-ups with meat, cheese and other sandwich fillings!.

Take whole wheat flour!. You can make it with refined flour, but I don't like it coz it's less healthy!.
It's kinda tough to explain the quantity of flour to water, but say you take two full coffee mugs of flour!.!.!.!.!.it should take approx 3/4th of water!. You got to knead the flour to a consistency where it is neither too soft nor too hard!. Be careful with water!.!.!.!.!.go slow first coz if the water gets too much, u'll have to add more flour and then it it doesn't stop!.
You can also add some olive oil and knead the flour with milk!. If u use milk, make sure u use that flour fast and don't refrigerate it for too long!.
Roll the dough on a flat hard surface with a good rolling pin, and soft firm strokes!. :) It takes a while to get better at it!. Www@FoodAQ@Com
