Mashed Potatoes
2 pounds russet potatoes (about 4 medium), peeled and cut into large chunks
1 1/2 teaspoons kosher salt, plus more as needed
4 cloves peeled garlic, smashed
1/4 cup unsalted butter
3/4 cup whole milk
Freshly ground black pepper
In a large saucepan, combine the potatoes, 2 teaspoons salt, garlic and enough cold water to cover!. Bring to a boil over high heat!. Lower the heat to maintain a simmer and cook until fork tender, about 15 to 20 minutes!. Drain the potatoes and garlic leaving just enough water in the pan to cover the bottom!.
Return the potatoes and garlic to the pan!. Add the butter and mash until melted!. In the microwave, heat the milk until just hot, but not boiling!. Stir into the potatoes and season with salt and pepper, to taste!. Serve immediately!.

Here are two potato dishes I make all the time:
Roasted potatoes
Take any type potatoes and cut into about 1/2 inch chunks along with a quartered onion, chopped garlic, salt, pepper, rosemary and any other seasonings you like!. Drizzle with olive oil and roast in a preheated 425 degree oven for 45 minutes to 1 hour!.
Boiled Irish Potatoes
Take new red potatoes and leave them whole or slice into chunks and place in heavily salted water and boil them until they are almost tender!. Drain off the water and then add in milk and butter to finish cooking them!. By the time the potatoes are tender the milk should have reduced and you have a nice sauce on your potatoes!.Www@FoodAQ@Com

Well what do you usually do!? What if I recommend the same thing you always make!? : )
Ok red potatoes, I would just halve or quarter them, drizzle them with olive oil, season with kosher salt, lemon zest, garlic, and black pepper and then roast them in a hot over (400ish)!.
You could also make salt potatoes - those are really good!. Boil in a supersaturate salt solution, drain and toss with butter and fresh dill!. Www@FoodAQ@Com

rinse and microwave about five potatoes till tender
about7 min for medium, 10 min for larger)
put a small amount of oil/margarine/butter or bacon grease in a skillet on medium high heat ;
slice the potatoes a little less than half inch thick with a knife and fork
(too hot to hold)
season and cook until golden brown on both sides
extremely tender and crispy, have with a rich sauce or just butter, touch of garlic sea salt
A healthier version rinse /microwave/slice as above, add salt/pepper
to potatoes, then place on foreman grill for approximately 6 minutes
(the grill marks crisp top and bottom quickly) Www@FoodAQ@Com
