Answers:
Bake a thin pizza base for 20 minutes!. Home-made is always best!.

Meanwhile, caramelize some sliced onions with sugar and butter in a frying pan until nice and gooey!.

Slice the goat's cheese into bite size chunks!.

Place a lareg handful of spinach into a colander over a pan of 5 cups of water!. Put a lid on the colander and allow the spinach to wilt!.

When the bases are slightly brown, get them out and spread over a thin layer of tomato pizza sauce!. Squeeze any excess water fromt he spinach and shred it over the base, dot small dollops of the onion jam over it and then place chunks of the goats cheese on top!.

Put the pizza back into the oven for 30 minutes or until the goat's cheese and the base goes brown and bubbly!.Www@FoodAQ@Com

1) for hard or semi-hard goats cheese:
roast a large tray of vegetables - for example onion, garlic, pepper, courgette and butternut squash - in the oven, basted with olive oil, rosemary and some chilli!. When done, pile onto a large dish, crumble the goats cheese over the top and serve with good bread, olives and a nice glass of red

2) for soft goats cheese:
spread a sheet of ready-rolled puff pastry onto an oiled baking sheet!. With a sharp knife mark a 1/2 cm edge around the pastry, but not cutting all the way through!. Spread goats cheese over the pastry, staying within your edging marks!. Cover with sliced fresh tomatoes!. Sprinkle with salt and pepper and bake in a medium oven for 10-15 minutes until well-risen and golden!.
To serve dribble with olive oil and scatter lots of freshly torn basil leaves on top!. (alternatively, blitz a large handful of basil with 2 tablespoons of olive oil and drizzle over the pie)
