How to make a Hunter Sauce ??!
I'm making CHICKEN SCHNITZEL, and looking for a "Hunter Sauce" to go over it!. Any ideas, I looked at food for fifty, cooks!.com, and allrecipes!.com

well, you will want to make your hunter sauce with chicken stock or vegetable stock if you are serving it over poultry!. any beef gravy on poultry isn't exactly the best flavor combo!. i would recommend using veggie stock, so the mushroom flavor really stands out in the sauce!.
start by sweating some onion and shallots in a saute pan with some butter or oil!. throw in a little chopped garlic if you would like, after the onion and shallot have been sweating for a minute!. in a separate pan, saute your mushrooms in butter or oil until tender!. add some white wine and let that reduce to about half!. to your pan of onion and shallot, add in some red wine and let that reduce to about half and strain into the pan with the mushrooms!. continue reducing until "au sec" or almost dry!. add in your vegetable stock, and a little bit of tomato paste to thicken it up!. cook long enough to get rid of acidity of the tomato paste, and until the sauce is as thick as you want it!.
