I bought a huge bag of apricots...what should I make with them?...I really dont want to make jam.!

Apricot Cobbler
Ingredients:
1 1/2 pounds fresh apricots, pitted and cut into 1/2-inch wedges
7 tablespoons sugar
1 tablespoon all-purpose flour
1 1/2 teaspoons fresh lemon juice
1/4 teaspoon almond extract
3/4 cup all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3 teaspoons sugar
2 tablespoons cold unsalted butter, cut into bits
1/2 cup well-shaken buttermilk
Directions:
1!. Make filling: Toss all filling ingredients together in a 9-inch glass or ceramic pie plate and let stand until juicy, about 30 minutes!.
Preheat oven to 400 degrees F!.
2!. Make topping: Sift together flour, baking powder and soda, salt, and 1 teaspoon sugar in a bowl!. Blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal!. Stir in buttermilk with a fork just until combined (do not overmix)!.
3!. Drop rounded tablespoons of dough over filling, leaving spaces in between to allow topping to expand!. Sprinkle with remaining 2 teaspoons sugar!.
4!. Bake cobbler in middle of oven until fruit is tender and topping is golden, about 30 minutes!. Cool slightly, about 15 minutes, and serve warm!.Www@FoodAQ@Com

i know several people have already said this but a cobbler would be great and quite simple!. but you could also make a lassi is like a smoothie but from india and usually made with mango but i've found you could substitute different types of fruit with it!. since apricots are smaller than mangoes you'd have to use more but i figure it'd be about 6 or 8 and then just 2 cups of yogurt plain or vanilla is fine and 2 tablespoons of honey!.
the original recipe usually calls for a small amount of ginger i've never added it but i hear it tastes great!. you could also make an apricot upside down cake!. if they're not already soft then just blanch them for a minute take them out and put them in an ice bath then peel and slice them!. if you've never made an upside down cake it's pretty simple i suggest using a cake mix to cut down the hassle!. butter a cake pan and sprinkle the bottom with brown sugar and layer the apricot slices do not layer!. then just pour the cake batter on top and bake according to the mixes directions!.
you could also make an apricot bellini it's quite easy!. just puree 10oz of apricots 1/2 cup of simple syrup!. place a tablespoon of puree and top off with champagne!.
