What is the name of this japanese soup?!
i had this soup in a japanese restaurant once, i think i even made it!. it was so long ago i can't remember what it's called, im trying to find the recipe online for it!.!.!.!.
it's generally served in a hot stone bowl with rice on the side, it has either chicken or beef broth as a base!. it usually has thinly slices rare beef on the bottom with glass noodles in it!. shiitaki mushrooms, maybe some green spinach type vegetables in it!. it also comes with a raw egg either intact or lightly mixed on top, the soup is suppose to be very hot so when it's served the eggs cook on top!.
it has it's own sauce with the same name as the soup!.

Miso would've been both clear & cloudy (when it settles) in a small bowl with tofu cubes & small pcs!. of wakame (seaweed)!.
Udon would've been most likely served in either a large bowl or a cast iron pot with a handle!. It would've been a clear broth with fat round white noodles & a few toppings (meat/veg!.)

THE TYPHOON LOVER: Moon-Viewing Noodles
By the time I got into Fukuoka, the moon was high!. I was starving, so I stopped at a little ramen shop for a bowl of steaming noodles topped with a raw egg!. Moon-viewing noodles, they were called!. The egg cooked slowly atop the noodles, and I ate slowly, savoring the rich taste of the noodles, the broth, everything!.

LONG SOUP (ORIENTAL)
8 green onions
1/4 sm!. head cabbage
1/2 lb!. raw boneless lean pork or beef
1 1/2 tbsp!. vegetable or olive oil
6 c!. chicken broth
2 tbsp!. soy sauce
1/2 tsp!. grated fresh ginger
4 oz!. thin egg noodles
4 very small egg (Quail, if you can find them)
Cut onions into thin slices!. Shred cabbage!. Slice pork into strips!. Heat oil in wok over medium high heat, stir-fry pork until no longer pink!. Add stock, soy sauce and ginger to pork!. Cook until boiling!. Reduce heat and simmer 10 minutes!. Stir in noodles and onions!. Cook until noodles are tender!. Add one egg on top each serving!. Makes 4 servings!.
Not sure if this is the one your looking for, but I use this for my basic soup and chang the flavor when the mood hits!. Exchange the ginger, for another herb!. Change the soy sauce with sesame oil and or cabbage with bok choy
