What spices do you put on chicken?!
I am going to bake a chicken!. I have a cast iron stand that I put either a can of beer or coke on and then put the chicken on top of the can!. It keeps the chicken moist and flavors it a little!. Any good spice mixtures ideas for me!. I normally use salt, pepper, onion powder and garlic powder!. Www@FoodAQ@Com

I stuff My chicken with a lemon, a lime, and fresh rosemary!. Rub it down with softened butter, sprinkle fresh ground pepper, a little season salt!. I put aluminum foil on it!. half an hour before it's done, remove the foil!. Don't forget to baste! A moist chicken is a happy chicken!Www@FoodAQ@Com
Typically, I do the following:
- Place 1/2 onion, 1/2 lemon, a couple cloves of garlic and a bunch of fresh thyme and rosemary in the cavity which has been coated with olive oil!.
- Clear some space with your fingers and put about 4 pats of butter under the skin of the breast!. This helps keeps the white meat from drying out!.
- Brush/drizzle the entire bird with olive oil and sprinkle generous amounts of salt, pepper, dried sage and rosemary!.
Pop in a 400 degree oven in a roasting pan for about 40 minutes to ake the skin brown and crispy!. Reduce the heat to 350 and roast for an extra 9-10 minutes per lb!. When I reduce the heat I'll usualyl poor some water in the bottom of the roasting pan (bird should be sitting on a rack so it wont get wet) to keep it from drying out!.Www@FoodAQ@Com

Make a dry rub and massage it into the bird!. Put a pinch of the rub into the beer can as well, so that the essence goes inside the cavity!. What are you in the mood for!?

I like tony's creole or zatarains with beer can chicken- but the secret to great chicken is to brine it first-
Heat up 1 cup water and add 1 cup salt- just heat enough to dissolve the salt, and let cool!. Add 2 beers, a tbs of honey, a tbs of lemon juice and whatever seasoning you like!. Soak the chicken in the brine for at least 4 hours in the fridge, then rinse it off before cooking!. Perfect every time!.
