Chicken Fried Chicken --
INGREDIENTS
30 saltine crackers
2 tablespoons all-purpose flour
2 tablespoons dry potato flakes
1 teaspoon seasoned salt
1/2 teaspoon ground black pepper
1 egg
1/4 cup vegetable oil
6 skinless, boneless chicken breast halves
DIRECTIONS
Place crackers in a large resealable plastic bag; seal bag and crush crackers until they are coarse crumbs!. Add flour, potato flakes, seasoned salt, and pepper to bag and mix well!.
Beat egg in a shallow dish or bowl; heat oil in a large skillet over medium high heat!.
One by one, dredge chicken pieces in egg beat, then place in bag with crumb mixture, seal bag and shake to coat!.
Reduce heat to medium and cook coated chicken in skillet for 15 to 20 minutes, turning frequently, until golden brown and juices run clear!.

Place chicken in bag, seal, and shake to coat!. Dip chicken in milk and egg mixture, then once more in flour mixture!. Reserve any remaining flour mixture!.
In a large skillet, heat oil to 365 degrees F (185 degrees C)!. Place coated chicken in the hot oil, and brown on all sides!. Reduce heat to medium-low, and continue cooking chicken until tender, about 30 minutes!. Remove chicken from skillet, and drain on paper towels!.

1/3 cup shortening
1 cup milk
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C)!.
In a large bowl, whisk together the flour, baking powder, salt, and sugar!. Cut in the shortening until the mixture resembles coarse meal!. Gradually stir in milk until dough pulls away from the side of the bowl!.
Turn out onto a floured surface, and knead 15 to 20 times!. Pat or roll dough out to 1 inch thick!. Cut biscuits with a large cutter or juice glass dipped in flour!. Repeat until all dough is used!. Brush off the excess flour, and place biscuits onto an ungreased baking sheet!.

2 frying chickens, about 2 1/2 to 3 pounds each, cut into serving pieces
2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon ground black pepper
1 cup milk
vegetable shortening for frying
1 tablespoon bacon drippings
Preparation:
Wash chicken and pat dry!.
In a heavy brown paper bag or large food storage bag, combine the flour and salt and pepper; shake to blend well!. Pour the milk into a wide shallow bowl!.
Heat 2 to 3 inches of shortening in a deep heavy skillet over medium heat, or electric fry pan set at 375° F!. Add the bacon grease!. When a drop of water spatters when it hits the hot oil, dip some of the chicken pieces into the milk then place in the bag and shake to coat evenly!. Arrange the chicken pieces in the fat, making sure not to overcrowd!. Fry the chicken until outside is golden brown and crisp, about 15 to 20 minutes, turning once to brown both sides!. Reduce heat to 350° F and fry until cooked through golden brown, about 15 minutes longer!. Turn once!. Drain chicken on brown paper or paper towels, adding a little more shortening and bacon grease if necessary, setting or regulating the temperature as for the first batch!.
Transfer the chicken to a large platter for serving!.

I just put 1/2 c to 3/4 c four in a ziploc bag and put seasoning salt, salt, pepper, and garlic salt until you see the flour looks like a good mix of flour and seasonings!. Whip up an egg in a bowl and dip chicken peices in it then shake them in the bag and fry on med-high heat to brown on both sides for about 10 min, then reduce heat to med-low, turn chicken skin side up!. Simmer uncovered about 20 min till juice of chicken is no longer pink!.

My fav!. fried chick recipie is easy! Season the chicken with Old Bay seasoning!. Dip in an egg/milk mix, dip in flour w/ a lil more Old Bay!. Thats it! (use enough Old Bay so it looks slighltly pink)
Another good one is the same, you just substitute the Old Bay with Lowrys Seasoning Salt!.
Both are a good mix of special seasonings!.!.!.!. Try it one day!

I just had my inlaws over last Saturday, and I made fried chicken, baked beans, a twice baked potatoes, and biscuits!!
Here are the recipes I used:
BUTTERMILK FRIED CHICKEN
1 3lb chicken--cut into pieces
2 cups buttermilk
1 large onion, sliced
1/4 cup chopped mixed fresh herbs (parsley, tarragon, thyme) or a teaspoon each of the dried herbs!.
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
2 cups flour
1/2 teaspoon garlic salt
1/2 teaspoon onion salt
1 teaspoon cayenne pepper
Salt and pepper
2 cups grapeseed oil, or other high smoke-point oil such as canola oil, or peanut oil
Soak chicken overnight (at least 8 hours and up to two days) in buttermilk with onions, herbs, paprika, and cayenne pepper!. (Regarding the use of buttermilk, my mother has had good results from soaking chicken in plain yogurt instead of buttermilk!.)
Drain in colander, leaving some herbs on chicken!. In a large paper or plastic (sturdy) bag, mix flour with seasonings!. Meanwhile, heat 2 cups oil in a large, heavy-bottomed skillet (cast iron, stainless steel, or anodized aluminum - something that can take the heat) on medium high heat until a pinch of flour starts to sizzle when dropped in the hot oil (but not so hot that the pan is smoking)!. Remember when working with hot oil, always have a pan lid close by!.
Place chicken pieces in bag with flour and shake until thoroughly coated!. Add chicken to hot pan and fry on 1 side for 12-15 minutes, until golden brown, and then use tongs to turn the pieces over and fry for another 10-12 minutes, again until golden brown!.
Be careful to keep the oil hot enough to fry the chicken, but not so high as it burns the chicken!. To do this on our electric stove we have to alternate the settings between high to medium high several times while we are cooking!.
Use tongs to remove chicken from pan!. Place on a rack over a cookie sheet or broiling pan for the excess oil to drain!. Add more salt and pepper to taste!.
Serves 4!.
BAKED BEANS
Just buy a can or two of Bush's Baked beans( you can use another brand but I like this one)
cook as directed but add 2 tablespoons of worschetisre sauce, 1/4 cup of diced onions, 1 table spoon of ketchup, and 1 tablespoon of brown sugar
Twice Baked Potatoes(Sometimes I blend all of these ingredients up and top with cheese and bake at 350 for about 15 to 20 minutes, casserole!
4 large baking potatoes
8 slices bacon
1 cup sour cream
1/2 cup milk
4 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded Cheddar cheese, divided
8 green onions, sliced, divided
Preheat oven to 350 degrees F (175 degrees C)!.
Bake potatoes in preheated oven for 1 hour!.
Meanwhile, place bacon in a large, deep skillet!. Cook over medium high heat until evenly brown!. Drain, crumble and set aside!.
When potatoes are done allow them to cool for 10 minutes!. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins!. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions!. Mix with a hand mixer until well blended and creamy!. Spoon the mixture into the potato skins!. Top each with remaining cheese, green onions and bacon!.
Bake for another 15 minutes!.

1 teaspoon salt
1/4 cup lard or vegetable shortening, chilled
2 tablespoons butter, chilled

Heat oven to 450°!. Adjust oven rack to center position!.
In a large bowl, combine flour, baking powder, soda, and salt!. Cut in chilled shortening and butter until you have pieces the size of small peas!. Make a well in center of dry ingredients; pour in buttermilk!. With a wooden spoon, gently blend dry ingredients into the buttermilk, just until mixture is clumping together!. If necessary, add a few more teaspoons of buttermilk!.
Transfer dough to a lightly floured board!. Pat out in a circle about 8 inches in diameter and 1/2-inch thick!. Using a 2 1/2 to 3-inch biscuit cutter, cut out and place on ungreased baking sheet!. Bake on center oven rack for about 10 to 12 minutes, until tops are browned!.
Makes 10 to 12 biscuits, depending on size of cutter!.

Remember when working with hot oil, always have a pan lid close by!.
Place chicken pieces in bag with flour and shake until thoroughly coated!. Add chicken to hot pan and fry on 1 side for 12-15 minutes, until golden brown, and then use tongs to turn the pieces over and fry for another 10-12 minutes, again until golden brown!.
Be careful to keep the oil hot enough to fry the chicken, but not so high as it burns the chicken!. To do this on our electric stove we have to alternate the settings between high to medium high several times while we are cooking!.
Use tongs to remove chicken from pan!. Place on a rack over a cookie sheet or broiling pan for the excess oil to drain!. Add more salt and pepper to taste!.
Serves 4!.
BAKED BEANS
Just buy a can or two of Bush's Baked beans( you can use another brand but I like this one)
cook as directed but add 2 tablespoons of worschetisre sauce, 1/4 cup of diced onions, 1 table spoon of ketchup, and 1 tablespoon of brown sugar
Twice Baked Potatoes(Sometimes I blend all of these ingredients up and top with cheese and bake at 350 for about 15 to 20 minutes, casserole!
4 large baking potatoes
8 slices bacon
1 cup sour cream
1/2 cup milk
4 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded Cheddar cheese, divided
8 green onions, sliced, divided
Preheat oven to 350 degrees F (175 degrees C)!.
Bake potatoes in preheated oven for 1 hour!.
Meanwhile, place bacon in a large, deep skillet!. Cook over medium high heat until evenly brown!. Drain, crumble and set aside!.
When potatoes are done allow them to cool for 10 minutes!. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins!. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions!. Mix with a hand mixer until well blended and creamy!. Spoon the mixture into the potato skins!. Top each with remaining cheese, green onions and bacon!.
Bake for another 15 minutes!.
BUTTERMILK BISCUITS
2 cups all-purpose flour, stirred before measuring*
2 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1/4 cup lard or vegetable shortening, chilled
2 tablespoons butter, chilled
3/4 cup buttermilk
Heat oven to 450°!. Adjust oven rack to center position!.
In a large bowl, combine flour, baking powder, soda, and salt!. Cut in chilled shortening and butter until you have pieces the size of small peas!. Make a well in center of dry ingredients; pour in buttermilk!. With a wooden spoon, gently blend dry ingredients into the buttermilk, just until mixture is clumping together!. If necessary, add a few more teaspoons of buttermilk!.
Transfer dough to a lightly floured board!. Pat out in a circle about 8 inches in diameter and 1/2-inch thick!. Using a 2 1/2 to 3-inch biscuit cutter, cut out and place on ungreased baking sheet!. Bake on center oven rack for about 10 to 12 minutes, until tops are browned!.
Makes 10 to 12 biscuits, depending on size of cutter!.
