This is my grandmother's cheesecake recipe passed down to my entire family!. It's the best!. I can't believe I'm sharing it, but everyone needs to know how to make an authentic Italian cheesecake!. It is creamy and not thick, which is why our family LOVES it! For best results, do NOT substitute any ingredients with low-fat unless you've made it before and want to experiment!.

INGREDIENTS (Nutrition)
2 (8 ounce) packages cream cheese, softened
1 (16 ounce) container ricotta cheese
1 1/2 cups white sugar
4 eggs
1 tablespoon lemon juice
1 teaspoon vanilla extract
3 tablespoons cornstarch
3 tablespoons flour
1/2 cup butter, melted and cooled
1 pint sour cream

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!. Lightly grease a spring form pan!.
Mix the cream cheese and ricotta cheese together in a mixing bowl until well combined!. Stir in the sugar, eggs, lemon juice, vanilla, cornstarch, flour, and butter!. Add the sour cream last and stir!. Pour the mixture into the prepared spring form pan!.
Bake in the preheated oven 1 hour; turn oven off and leave in oven 1 hour more!. Allow to cool completely in refrigerator before serving!.

Cheesecake Recipe 1

Ingredients:

Crust:

1 1/2 c!. Zwieback crumbs
3 tbsp!. butter
2 tbsp!. sugar


Filling:

1 lb!. cream cheese
1/2 c!. sugar
1/8 tsp!. cinnamon
1/2 tsp!. vanilla
1 tsp!. grated lemon peel
1 tbsp!. lemon juice
2 egg yolks
2 egg whites


Topping:

1 1/2 c!. sour cream
1 1/2 tbsp!. sugar
1 tsp!. vanilla


Directions:

1!. Blend crumbs with butter and sugar!. Press into bottom of 8 inch pie plate!.

2!. Bake at 300 degrees for 5 minutes and cool!.

3!. Blend cream cheese with cinnamon, sugar, vanilla, lemon juice and lemon peel!. Add egg yolks, one at a time and mix well!. Beat egg whites well and fold into mixture lightly!.

4!. Pour on top of crust and bake at 325 degrees!. Cool slightly then spread the sour cream topping on top of the cheesecake!.

5!. Return cake to oven for 10 minutes!. Cool and refrigerate for 6 hours or overnight!. Www@FoodAQ@Com

Pumpkin Cheesecake

CRUST
1 1/2 cups graham cracker crumbs
1/3 cup butter or margarine, melted
1/4 cup granulated sugar
CHEESECAKE
3 packages (8 oz!. each) cream cheese, softened
1 cup granulated sugar
1/4 cup packed light brown sugar
2 large eggs
1 can (15 oz!.) LIBBY'S? 100% Pure Pumpkin
2/3 cup (5 fl!.-oz can) NESTLé? CARNATION? Evaporated Milk
2 tablespoons cornstarch
1 1/4 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
TOPPING
1 container (16 oz!.) sour cream, at room temperature
1/3 cup granulated sugar
1 teaspoon vanilla extract
LIBBY'S? 100% Pure Pumpkin

PREHEAT oven to 350° F!.

FOR CRUST:

COMBINE graham cracker crumbs, butter and granulated sugar in medium bowl!. Press onto bottom and 1 inch up side of 9-inch springform pan!. Bake for 6 to 8 minutes (do not allow to brown)!. Cool on wire rack for 10 minutes!.

FOR CHEESECAKE:
BEAT cream cheese, granulated sugar and brown sugar in large mixer bowl until fluffy!. Beat in eggs, pumpkin and evaporated milk!. Add cornstarch, cinnamon and nutmeg; beat well!. Pour into crust!.

BAKE for 55 to 60 minutes or until edge is set but center still moves slightly!.

FOR TOPPING:
COMBINE sour cream, granulated sugar and vanilla extract in small bowl; mix well!. Spread over surface of warm cheesecake!. Bake for 5 minutes!. Cool on wire rack!. Refrigerate for several hours or overnight!. Remove side of springform pan!.

1 cup sugar
4 eggs
1-1/4 tablespoon lemon juice
Topping:
2 cups sour cream
1/4 cup sugar
1 teaspoon vanilla

Need: 10″ springform pan
Oven: 350 deg!. F!. for 1 hour; 475 deg!. F!. for 15-20 min!.

Crust: Mix all ingredients together and press into 10″ springform pan!.
FILLING: Combine salt, sugar, eggs and lemon juice and beat till smooth!.
Set aside in large bowl add 1 package of cream cheese at a time and cream
till smooth!. Gradually add egg mixture and beat till it is mixed well!.
Pour into springform pan and bake at 350 deg!. F!. about 1 hour!. ( Put foil
under pan to catch drippings!.)

Spread topping on top and bake at 475deg for 15-20 minutes!. Refrigerate for

By elaborate would strawberry glaze or whipped cream on top make it fancy enough for you!? If so this is the best tasting and very easy cheesecake recipe!. And you can fancy it up however you like!.

wow! Amanda M has my "secret" recipe except I use Zwieback toast for the crust (find it in the baby aisle)!. The only thing is that cheescakes are usually not that attractive!. I heard that if you bake it in a water bath, the top won't crack!. You could decorate it with candied violets or something like that!.Www@FoodAQ@Com

why not do a no bake cheesecake, soft cheese, double cream a little sugar egg white and gelatine!.Crushed biscuits and butter for the base and chill in the fridge, delicious, good luck xWww@FoodAQ@Com
