Answers:
I would do the following:

1) Cook the rice
2) slice the mushrooms and avocado and onion!.
3) Fry the onion, mushrooms and a bit of garlic in a pan!.
4) put the spinach in a bowl of water and mircowave for 3-4 mins
5) when the rice is done, mix in the fryed mushies and onion!.
6) also mix in the spinach and corn, melted buter and grate the cheese and scatter on top!.
7) Let it sit for a minute to let the cheese melt!.

Now i feel hungry now!

It won't be a real risotto, as you don't have the right type of rice!. but!.!.!.!.

Cook onions in butter till translucent, add garlic and mushrooms, and cook for a couple of minutes!.
Add rice (about a half a cup, maybe a little more if you are really hungry) and stir until coated in butter!. Cook a couple of minutes, stirring all the time (the rice should start to turn white)

Add some hot stock, and cook until absorbed!. Add the stock little by little, you'll need about a cup or so of stock in total!. (Just use a stock or bullion cube mixed into water, chicken or veg will work!. or you could use water if you don't have any)

When the rice is done, stir in your chopped spinach and heat through until wilted!. Season to taste, grate a little cheese in, and serve!.Www@FoodAQ@Com

Chop some onion and garlic and mushrooms
heat up a pan to med heat add those ingredients
cook until onions are soft and slightly brown
add your rice and cook together for about 15 minute
slowly add a little water and stir let rice absorb the water and add some more water!.!.!.!.!.!.!.!.!.keep stirring and repeat maybe 30 minutes until rice is cooked
stirring releases the starches in the rice giving your dish that creamy risotto texture!.
