Summer Pudding -
Ingredients
1 slightly stale, good quality sliced white loaf (thick sliced is better)
225g8/oz redcurrants with stalks picked off
225g8/oz blackcurrants with stalks picked off
225g8/oz whitecurrants with stalks picked off (these may be difficult to find, substitute red and black if so)
225g/8oz raspberries
225g/8oz blackberries
225g/8oz caster sugar
Method
1!. Remove the crusts from the bread and leave to stale a little further whilst the fruit is being prepared!.
2!. Put the red, black and white currants in a pan with the sugar and bring to a bare simmer over a low heat, stirring occasionally!. Simmer for 10 minutes, then remove from the heat and stir in the raspberries and blackberries!. Allow to cool completely!.
3!. Line a pudding bowl with the slices of bread, trimming them to fit and reserving some for the lid!.
4!. Stand this bowl in a tray with a rim and fill the well between the bread slices with the liquid-soaked fruit!.
5!. Cut the reserved slices of bread into triangles and use to form a lid to cover the pudding!. Trim any protruding bread from the sides, cover with a circle of greaseproof paper and put a plate on the top which should just fit inside the rim of the pudding bowl!.
6!. Place tins to the total weight of 1!.5kg/3lb on the plate and transfer the whole assemblage to the refrigerator!. Keep for up to three days, occasionally spooning back any juices that have overflowed into the tray (there may be quite a lot, this is why you need a tray with a rim)!.
7!. To serve, remove the weights, greaseproof paper and plate, then carefully run a flexible palate knife down the sides and under the pudding to loosen it from the bowl!.
8!. Put your serving plate on top of the bowl and gripping firmly, invert!. Tap the base of the bowl with a wooden spoon for luck and remove the bowl!. Spoon any accumulated juices from the tray over the top and serve with crème fra?che!. Www@FoodAQ@Com

A good recipe for using up stale bread is bread pudding!.
6 slices stale bread
30 g butter, melted
80 g mixed fruit
4 eggs, beaten
475 ml milk
150 g white sugar
2 g mixed spice
Preheat oven to 350 degrees F (175 degrees C)!.
Break bread into small pieces into an 8 inch square baking pan!. Drizzle melted butter or margarine over bread!. If desired, sprinkle with mixed fruit!. In a medium mixing bowl, combine eggs, milk, sugar, and mixed spice!. Beat until well mixed!. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture!. 2 cups chopped onions 3/4 cup maple syrup
3 cups potatoes, skin on 2 cups turnips, diced
1 cup green onions, cut into small rounds
4 cups beef stock
salt and pepper
In a pan heat the oil, add the venison and cook until the pieces are cooked on all sides!. This will take a few minutes!. Add the onions and cook for 1 minute and then add the maple syrup, continue to cook for at least 3 to 4 more minutes!. Put in potatoes, turnips and green onions and cook while stirring for 3 minutes!. Add beef stock, salt and pepper, simmer for one hour or until tender!.

1/4 cup bacon drippings
10 ears fresh corn, cleaned and kernels cut from cob
1/4 cup milk
1 teaspoon salt
1/2 teaspoon pepper
In a heavy or iron skillet, heat drippings over medium heat!.
Add corn and cook for about five minutes, then add milk, salt and pepper!.
Cook stirring frequently till corn looks cooked (about 30 minutes)!.
Remove from stove and serve!.

1/2 cup vinegar
1/2 scant cup of water
1 1/2 cup brown sugar
1 scant teaspoon dry mustard
Boil this and pour over the loaves in roaster!. Bake slowly 2 hours!. (Makes 12-14 small loaves)!. "As you can see, this recipe is almost 80 years old!. Maybe this is one that someone was looking to find!."

there are plenty of recipes for stale bread, such as bread and butter pudding, or anything which involves breadcrumbs (i!.e!. burgers, meatloaf, stuffing)!.
Tomatoes which are past their best can be chopped and added to a tomato sauce, or used in soup (in fact most veg which are past their best can be added to a soup!)!.
milk just going sour can be used in scones!.
leftover mash - stick it on top of a shepards pie, cottage pie, or a makie uppie pie!
leftover roast with all the trimmings - you can make a stir fry from it, and add the gravy to your sauce!.

Make an egg combo!. Put all dinner leftovers, meats, veges etc into large frying pan!. Then beat three eggs well with 1/2 cup milk!. season with salt and pepper!. Heat the leftovers through by stirring over hot heat then turn element down to medium heat and pour egg mixture over the top sprinkle a cup of grated cheese on top of that!. Cook without stirring for about 5 minutes then put the pan under a hot grill to finish cooking the egg and to melt the cheese!.
Slice up and serve!. Its yummy and you can pretty much add anything you like to this receipe!.Www@FoodAQ@Com

Try making cheap, quick and easy soups!. Take minutes to make but cost next to nothing to make - far healthier than the canned ones with additives (and cheaper too!)!. also, try making jam from overripe fruit!. You don't need huge amounts!.

Cottage or Sheppard's Pie to use the end of a roast - mince the left over meat up, bung in some tinned tomatoes, chopped onions and carrots, spread mashed on the top and bake in the oven for 20 or 30 minutes!.

Have you tried rissoles!? Take some left-over roast or mince (chicken, turkey, beef, pork) and chop!. In a separate bowl, soak bread with milk -- this can be old bread!. Squeeze the liquid from the bread!. Mix with the mean and a beaten egg!. Season!. Form into sausage shape / or meatballs!. Standard breading -- dip into seasoned flour, then beaten egg, then breadcrumbs!. Deep or shallow-fry in v!. hot vegetable oil until nicely browned!. Www@FoodAQ@Com
The best one I know is turn it into soup!. Stale bread can also be used for french toast or making meat loaf!. If you don't have stock to start a soup with you can always buy some at the grocery store!. I think College Inn is one brand!.Www@FoodAQ@Com
