Question: I'm looking for a recipe for Chocolate Pate!?
Almost like a flourless Chocolate Cake but not as sweet and a bit creamier!. Served with a raspberry coulis and whipped cream!.Www@FoodAQ@Com

Chocolate Pate
:
1 cup butter
3 cups semisweet chocolate chips
1 tsp coffee crystals, crushed
1/2 cup sugar
2 eggs
1 tsp vanilla
1 1/2 cups whipping cream
Preparation:
Melt butter in a saucepan, and add chocolate chips and coffee powder!. Stir until smooth and melted!. Pour into a large bowl, then add sugar and beat well!. Add eggs and vanilla, while beating!. In another bowl, beat cream until still peaks form!. Fold into the chocolate mixture!. Turn batter into a loaf pan lined with plastic wrap!. Cover loosely and chill overnight in the fridge!. Remove from pan, then serve sliced!.

Ingredients:
5 ounces bitter sweet chocolate, coarsely chopped
1/2 cup cold heavy cream
1/2 cup milk
2 large eggs
2 tablespoons sugar
1 tablespoon flavored liqueur
1/4 teaspoon cinnamon

Directions:

Butter 1/2-cup ramekins and line them with plastic wrap, allowing a 2-inch overhang!.

In a bowl set over a pan of simmering water, stir the chopped bitter-sweet chocolate until it is melted!. Allow the chocolate to cool!. in a bowl, whip the cold heavy cream until it hold firm peaks!. Allow the whipped cream to come to room temperature!.

In a saucepan, bring the milk to a simmer!. In a bowl, beat the egg yokes, and sugar, then whisk in the hot milk!. Return the mixture to the saucepan and whisk over moderate heat until thickened, about 2 minutes; do not let it boil!. Whisk in the flavored liqueur and the cinnamon!.

Stir the milk mixture into the melted chocolate and let cool!. Gently fold in the whipped cream!. Spoon the pate mixture into the prepared ramekins and refrigerate until very firm, at least 4 hours!.

Remove the chocolate pates from the ramekins, invert them onto plates and peel off the plastic wrap!. Garnish or decorate any way you wish!.

Chocolate Pate with Cranberry Coulis

Coulis:
1 1/2 cups Ocean Spray? Jellied Cranberry Sauce
3/4 cup Ocean Spray? Cranberry Juice Cocktail
1 teaspoon lime juice

Pate:
1 1/2 cups heavy cream
1 large egg yolk
12 ounces semi-sweet chocolate
1/3 cup corn syrup
1/4 cup butter or margarine
1 teaspoon vanilla extract
Whipped cream, garnish

1!. To Make Cranberry Coulis:
Puree all ingredients in a blender or food processor until smooth!. Chill!. Makes 1 3/4 cups!.

2!. To Make Pate:
Line an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan with plastic wrap!. Combine 1/4 cup cream with egg yolk; set aside!.

3!. Combine chocolate, corn syrup and butter or margarine in a medium saucepan!. Cook over low heat until melted, stirring frequently!. Remove from heat!. Add cream mixture to saucepan!. Cook 1 minute over medium heat, stirring constantly!. Let cool to room temperature!.

4!. Beat remaining cream with vanilla in a small mixing bowl until soft peaks form!. Use a rubber scraper to gently mix the chocolate into the whipped cream!. Pour into pan!. Cover with plastic wrap!. Refrigerate overnight or freeze 3 hours!.

5!. Spoon some Cranberry Coulis on a dessert plate!. Place a slice of Chocolate Pate on plate!. Garnish with whipped cream!.
