AVOCADO CHEF SALAD
Makes 6 servings!. Avocado adds a touch of California to a classic chef salad!.
VINAIGRETTE:
1/3 c!. oil
1/4 c!. red wine vinegar
1 tbsp!. capers, drained & chopped
1/4 tsp!. salt
1/4 tsp!. paprika
1/8 tsp!. garlic powder
1/8 tsp!. dry mustard
SALAD:
2 c!. chopped red leaf or other lettuce
1 c!. chopped watercress
1/2 c!. thinly sliced mushrooms
1/2 c!. pitted black olives
1 c!. croutons
1 avocado, seeded, peeled & cubed
2 hard cooked eggs, sliced
4 oz!. Swiss cheese, julienned
12 oz!. cooked ham, turkey and/or roast beef, julienned
To make vinaigrette, combine oil, vinegar, capers, salt, paprika, garlic powder and mustard in jar with tight-fitting lid!. Shake vigorously!. Chill, covered, until ready to serve!.
For salad, combine lettuce, watercress, mushrooms, olives and croutons in large bowl!. Toss lightly to mix!. Arrange avocado and eggs on top of salad!. Top with Swiss cheese and meat!. Just before serving, shake dressing, pour over salad and toss!.

CHEF'S SPINACH SALAD
1 pkg!. fresh spinach
1 c!. Italian dressing
8 oz!. fresh mushrooms, sliced
1/4 lb!. bacon
1 tbsp!. sugar
1 hard boiled egg, chopped
Add sugar to dressing and marinate mushrooms in dressing for 1/2 hour!. Fry bacon crisp and crumble!. Clean and break spinach into small pieces!. Add all ingredients to spinach and toss and serve!.

1 head lettuce
4 tomatoes
1 onion
4 oz!. cheese
1 c!. Thousand Island or French dressing
1 lb!. ground beef
1 (15 oz!.) can kidney beans, drained
Hot sauce to taste
1 lg!. avocado
1 sm!. bag tortilla chips
Combine first 5 ingredients in large bowl tossing to mix!. Brown ground beef in skillet stirring until crumbly!. Add kidney beans, mixing well!. Toss with lettuce mixture!. Add remaining 3 ingredients, tossing well!. Makes 6-8 servings!.

Polish sausage, steamed, cooled, and cut into sm!. chunks
Grated Parmesan cheese
Sliced onions
Grated cheese (your choice)
Fresh mushrooms
Mix ingredients in amounts as desired!. Use a creamy Italian or Ranch dressing!. Serve with French bread and fresh fruit for a satisfying summer supper!.
