Answers:
I always use applesauce instead of oil and it turns out perfectly! If the recipe calls for 1/4 cup of oil, I use a heaping 1/4 cup of applesauce, or 1 cup oil - heaping 1 cup applesauce and so on!.

Applesauce works better in muffins and cake rather than cookies though, cookies need the butter!.

Here's my favorite Muffin Recipe (you could do this in a 9x9 pan for more of a 'cake')

1 1/2 cups flour - I use 1 cup whole wheat flour, 1/2 cup oats
1/2 cup sugar
1 teaspoon salt
2 teaspoons baking powder
3/4 cup soy milk
1/4 cup oil - I use applesauce
1 cup frozen blueberries
I add cinnamon, like a lot

Directions:

Preheat oven to 400F!. Place baking cups in a muffin pan!.

Combine flour, sugar, salt, and baking powder together in a mixing bowl!. Add soy milk and oil!. Mix!.

Fold in blueberries!.

Pour into baking cups (or greased muffin pan) and bake for 25-30 minutes!.

Serves: makes about 8 muffins

Preparation time: 30 minutes!.

also, you can sub anything for the blueberries, like chocolate chips, banana, shredded carrot, zucchini, anything! I make these all the time, my boyfriend eats four at a time!.

How about a potato!?

Get a Cookie Sheet and Aluminum foil!. (Lay the slices flat on the aluminum foil covering your cookie sheet!. You can omit the aluminum foil if you have a no-stick surface)

Slice a potato into 1/8" --> 1/16" slices!. Put it in the oven at 375 degrees for 45 minutes, and Volla, you have a new way to bake a potato!. More time and lower tempature for soggier, less time at higher tempatures to make them more potato-chippy!. The thinner slices will also turn into something resembling potato chips if you keep them to the thinner size!.Www@FoodAQ@Com
