I need dinner ideas...?!
I'm in dire need of dinner ideas!. I've got 4 boneless chicken breasts that I have to use tonight (been in the fridge for awhile) and I'm stumped as to how to make them!. I'm thinking wrapping them in bacon and then roasting them, but what else should I make with this!? We're out of potatoes so that's out of the question!. I've got zucchini but I'm really sick of it (had it every night for the last week!.!.!.our garden was very abundant this year)!. What tasty side dish could I make with this!? How can I jazz up the chicken!? I've got the standard "pantry" stuff!.!.!.Www@FoodAQ@Com

Cream Cheese and Chicken Roll Ups
4 boneless chicken breasts, pounded flat
1 container flavored Philly Cream cheese (Chive & Onion, Smoked Salmon, Garlic & Onion, etc)
8 strips of regular or maple flavored bacon
Preheat Oven to 350 F
Spread each chicken breast with cream cheese putting more towards the center of
the chicken breast!. Roll up chicken from the thickest end to the thinnest keeping as much cream cheese inside as possible!. Wrap one piece of bacon around chicken covering the open ends!. Then wrap another piece going the other direction crossing the previous piece to cover all openings!. Secure with toothpicks or unwaxed dental floss!.
Put in casserole dish or square pan!. Bake 15 minutes, turn over and bake 15 more minutes!. Drain off most of the grease and broil on each side for a few more minutes until bacon is brown and crisp!. Remove toothpicks or dental floss and serve as is or cut slices and spread more cream cheese on them to melt!.
Serving Suggestions:
I serve with garlic flavored noodles and green beans!. Any flavored cream cheese will work and if you use the smoked salmon one, the maple bacon tastes best or you can drizzle the regular bacon with maple syrup!.

3 oz!. Mozzarella Cheese, grated
2 cups Italian Bread Crumbs
2 oz!. Parmesan Cheese
1/2 tsp garlic salt
1 egg, plus 1 tbs water, slightly beaten
Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl!. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt!. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side)!. Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve!. Makes 4 servings!.
Creamy Fettuccini Alfredo
1 – 8 oz!. Package Philly Cream Cheese (I use the light version – 1/3 less fat), cubed
? cup (3 oz!.) fresh grated Parmesan cheese (I like De Giorno, don’t use Kraft)
? cup margarine (I use I Can’t Believe It’s Not Butter Light)
? cup milk or half and half (I use 1% or 2% low fat)
8 oz!. fettuccini, cooked, drained (I use the fresh Contadina low fat one)
In large saucepan, combine cream cheese, Parmesan cheese, margarine and milk!.
Stir over low heat until smooth!. Add to drained fettuccini and toss lightly!. Sprinkle with fresh Parmesan cheese if desired!. Makes 4 servings!.
Super Broccoli Casserole
2 boxes or 1 bag frozen, chopped broccoli, cooked and drained
2 eggs beaten
1 sml onion, minced
1 can cream of mushroom soup
? cup mayonnaise
1 cup grated cheddar, jack, or mozzarella cheese
1 cup cracker crumbs
? cup butter
Combine first 6 ingredients, add to buttered 9x11 casserole dish!. Sprinkle with cracker crumbs and dot with butter!. Bake at 350F for 1 hour!.

Cook the boneless skinless chicken breasts in a skillet with a little oil about 4 minutes per side on medium heat!. Add one chopped onion, some of that zucchini, chopped - cook briefly and add 1 cup of chicken broth!. Cook about 3 minutes then add one jar of spaghetti sauce!. Turn heat to low, cover and let simmer until chicken is done, approximately 20 minutes!. Meanwhile, cook some spaghetti following directions on the box!. Drain the pasta and serve the chicken and sauce over the pasta!. Bagged salad and some Italian bread complete the meal!.
Feeling more energetic!? Dip the chicken in beaten egg and roll in a breadcrumb & parmesan cheese mixture before frying and call it Chicken Parmigiana!.

If you have cheese cut a horizontal slit in the chicken and stuff with cheese before baking!. Not healthy but ohhhh so good!.

It has a marinade that tenderizes the chicken and keeps it moist!. We grill ours on skewers!. If you cooked yours on the grill,you could make a medley of vegetables -- I use tomato, zucchini, and mushrooms -- and put a herb garlic butter with them, wrap it all in foil and plop it on the grill at the same time!. Or, you could put pesto on there!. The same site has a good pesto!. Here's the link:

pound your chicken breasts thin and cut them up into strips!. i use !.5 regular and !.5 italian seasoned breadcrumbs!. i mix them together!. you need to coat the strips in egg and then coat them in the breadcrumbs!. i put them in a frying pan and squeeze fresh lime juice over them!. fry until golden!. i like to flip them a couple of times so the lime is cooked into both sides nicely!.

For chicken breasts, I like to pound them thin and make cordin bleu!. Put slices of swiss cheese and ham in between each chicken breast, roll them and secure with toothpicks!. Dip each piece in flour, egg and then bread crumbs!. You can now fry them!.Www@FoodAQ@Com
