First of all , you need to pre-season your chicken wing before grilling!.
Second , your fire need to be in ember form, direct fire will burn up your chicken wings!.
You may use foil to grill but it is not advisable as you can't really see or know when your wings is either uncooked, cooked or overcooked!.

Wings are a very fatty cut of chicken, and as the skin cooks and drops the fat onto th coals/burner, it will cause flare-ups and burn!.
Yes, you can wrap in foil!. I'd grill them a bit, just for some flavor and color, then put the basically-raw wings into a foil pouch and cook on the grill or in the oven!.Www@FoodAQ@Com

Poach them first!.!.!.!.!.!.!.that way they are done or nearly done and only need the grill to finish and have the sauce penetrate!. also make sure that the coals are white and not in flames!.!.!.!.!.flames and barbecue are not good and will lead to burning!. Flare ups you can't help, just keep a spray bottle handy for those!. Leave 1/4 to 1/2 of your grill for indirect heating/cooking by placing most of the coals to one side!.!.!.!.!.!.Www@FoodAQ@Com
your fire is too hot!. let your charcoal burn down a little bit longer, or lower your fire if cooking with gas!. you have to really watch wings and turn them often!. also don't put anything on them other than dry seasoning when grilling, put the sauce on after!. should take about 20 minutes to fully cook wing piecesWww@FoodAQ@Com
Get a rack that holds the chicken vertically, then cook them over indirect heat for 30-45 mins!.
Then put them directly over the coals for 5-10 minutes using your favorite sauce!. I like my wings spicy - so I often use a spicy homemade BBQ sauce then wash then down with a few beers!.Www@FoodAQ@Com

Simple answer!. Turn the heat down, and cook them slowly!. Keep them well sauced (only after they are almost done cooking)!.
Most people grill at temp that are way too high, and the food gets over done on the outside and gets dried up!.

I hate that when that happens!. I solved that problem by microwaving them for about 4-5 minutes on medium-high heat, then put them on the grill!. Give it a try - it worked for me!. Www@FoodAQ@Com
