hmm, well in my opinion, simple is sometimes best!. and i myself, looooooove peanut butter cookies with frosting or something sweet to indulge in on top!.

ingredients inclue:

- a cup of peanut butter (chunky OR creamy)
- 1 teaspoon of vanilla extract
- 2 cups of flour
- 1 cup of granulated sugar
- 1 cup of brown sugar
- 1 egg
- 1 teaspoon baking powder
- 1/4 cup milk

(mix them all together, and before you use your hands with the batter, make sure you use PAM or oil on your hands so the batter doesn't stick to your fingers, then cook on a GREASED cookie sheet at 350 for about 12 minutes)

This recipe makes 4 small brownies - just for you!. If you have a one-serving size corning casserole dish or any other small oven-proof bowl to put the mixture in - it will be perfect!.

BROWNIE BITES

2 T mayonnaise
1/4 tsp baking powder
2 T cold water
1 T chopped nuts
1/4 tsp vanilla
1-2 tsp powdered sugar
1/4 c flour
3 T sugar
1 T unsweetened cocoa powder

Combine the mayonnaise, cold water and vanilla!. Sift together the flour, sugar, cocoa powder and baking powder!. Stir the flour mixture into the mayonnaise mixture until well mixed!. Stir in the chopped nuts!. Spray a 4 1/2x2 1/2x1 1/2 loaf pan or small Corningware single-serving casserole dish with non-stick spray!. Pour the batter into the pan!. Bake in a preheated 350o oven or your toaster oven for 20-25 minutes or until done!. Cool thoroughly!. Remove from the pan, cut into 4 bars!. Sprinkle powdered sugar on the bars!.

Makes 4 servings!.

here's another recipe for you:

APPLESAUCE SPICE CAKE (makes 4 slices)

1/4 c plus 2 T sugar
3/4 c flour
1/2 tsp vanilla
1/2 egg (beat a whole egg, place in a measuring cup and pour into your mix, half of what is in the measuring cup)
2 T butter or margarine
1/4 c plus 2 T applesauce (I always by those Junior babyfood sized jars for making small desserts)
1/2 tsp cinnamon
Dash nutmeg
1/4 tsp cloves
1/4 tsp baking soda dissolved in 3/4 tablespoon hot water off
1/2 c of stewed raisins

Place your raisins in a pan with water and bring to the boil!. Turn off the heat and let it steep (can do in the microwave too) Use the water from the raisins with the soda but only 3/4 tablespoonfuls of the water!.

Beat together the butter and sugar!. Beat in the egg, vanilla and then the applesauce!. Sift together the flour, cinnamon, nutmeg and cloves!. Add to the applesauce mixture!. Place the baking soda in a small cup!. Add 3/4 T of the hot water from the raisins!. Mix the baking soda mixture plus the raisins into the applesauce mixture!. Place in a Corningwear single-serving sized bowl or any other oven-proof dish that is small!. Bake in preheated 350o oven for 20-25 minutes or until a toothpick comes out clean!.

Make instant pudding in your favorite flavor, its quick and tastes so much better than the stuff you buy in those little cups!.!.!.or even better!.!.make the real thing, where you have to do it on the stove!.!.lots of stirring, but very good!.!.!.!.

Heres a recipe for chocolate cream pie, but not the pudding type, it's put in the freezer to set up: 1 Graham cracker crust (pre made pie shell); 1 3 oz bar of cream cheese; 1 tub of cool whip; 3 squares semi sweet chocolate: melt chocolate in double boiler or in microwave: whip up the cream cheese so its soft; add chocolate to cream cheese, mix til combined; add the cool whip, mix til combined; put it into the pie shell, freeze for 2 hours or so!.!.!.!.take out and enjoy!.!.!.I believe the recipe for this can be found on the labels of the crust (if you get the Keebler brand) Its very good!.

Pineapple Coconut Cake
Cake
1 1/2 cups cake flour
1 cup whole-wheat flour, preferably white whole-wheat (See Ingredient Note)
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup granulated sugar
1/2 cup honey
1/3 cup canola oil
3 tablespoons butter, melted
3/4 cup nonfat buttermilk or milk
2 tablespoons coconut rum or dark rum
2 teaspoons coconut extract
3 large eggs, separated (reserve 2 yolks for pineapple curd)

Pineapple curd
2 large egg yolks
1 6-ounce can pineapple juice (3/4 cup)
1/4 cup granulated sugar
5 teaspoons cornstarch

Frosting & garnish
12 ounces reduced-fat cream cheese (Neufchatel), at room temperature
1/3 cup confectioners’ sugar, sifted
1 teaspoon coconut extract or rum
Pinch of salt
1 1/2 cups finely diced fresh pineapple, divided
2 tablespoons toasted coconut (see Kitchen Tip)

1!. To prepare cake: Preheat oven to 350°F!. Coat two 9-inch cake pans with cooking spray!.
2!. Sift cake flour, whole-wheat flour, baking powder and 1/4 teaspoon salt into a medium bowl!. Beat 3/4 cup sugar, honey, oil and melted butter in a large bowl with an electric mixer on medium speed until well blended!. Whisk buttermilk (or milk), rum and coconut extract in a small bowl!. With the mixer on low speed, alternately mix the dry ingredients and the wet ingredients into the sugar mixture, starting and ending with dry ingredients and scraping the sides of the bowl as needed, until just combined!.
3!. Clean and dry the beaters!. Beat 3 egg whites in a medium bowl with the electric mixer on medium-high until soft peaks form!. Gently fold the whites into the batter in two additions until just combined!. Divide the batter between the prepared pans, spreading to the edges!.
4!. Bake the cake until a toothpick inserted in the center comes out clean, 26 to 30 minutes!. Cool in the pans on a wire rack for 10 minutes!. Turn out and let cool to room temperature, about 1 hour!.
5!. To prepare curd: Whisk 2 egg yolks, pineapple juice, 1/4 cup sugar and cornstarch in a small saucepan!. Cook over medium-low heat, whisking constantly, until thick and beginning to bubble, 3 to 5 minutes!. Let cool completely!.
6!. To prepare frosting & assemble cake: Beat cream cheese, confectioners’ sugar, extract (or rum) and a pinch of salt in a medium bowl with an electric mixer until smooth and creamy!.
7!. Place one cake layer, top-side down, on a cake stand or plate!. Spread evenly with the pineapple curd, stopping just short of the edge!. Scatter 1/2 cup diced pineapple over the curd!. Place the remaining layer, top-side up, on top!. Spread the frosting over the top and sides!. Decorate the top with the remaining 1 cup pineapple and toasted coconut!.

2 cups frozen mixed berries
1 cup strawberry flavored yogurt
1 banana, sliced
1 cup milk
1/2 teaspoon white sugar (optional)
In the container of a blender, combine the mixed berries, strawberry yogurt, banana, milk and sugar!. Cover, and blend until smooth!. Pour into glasses and serve!.


2 cups strawberries, hulled
1 cup orange juice
1 (8 ounce) container strawberry yogurt
2 cups ice
1 banana
Blend until smooth


1 Asian pear, cored and cubed
2 large strawberries, hulled
2/3 cup vanilla fat-free yogurt
1/4 cup fat-free milk (regular milk and yogurt are fine too)
2 teaspoons white sugar
blend until smooth



Ingredients:
1 cup frozen unsweetened strawberries
1/2 cup frozen unsweetened blueberries
1/2 tsp!. Crystal Light Classic Orange Sunrise powdered drink mix (half an On The Go packet or 1/8th of a tub)
1 no-calorie sweetener packet

Directions:
Place frozen fruit in the blender and allow it to thaw slightly (about a minute or two)!. Meanwhile, dissolve powdered drink mix and sweetener in 10 oz!. of cold water!. Stir well, and then pour drink mixture over the fruit in the blender!. Blend at medium-high speed until thoroughly mixed!. If blending slows, stop blender, stir mixture, and blend again!. I have the most awesome dessert recipe!. Every time I bring it to a party, people love it!!

Here it is:

Oreo Mud Pie

In one bowl combine:
500 ml Cool Whip
8 individual sized cups of vanilla pudding

In another bowl combine:
250g spreadable cream cheese
1/4 cup of margarine/butter
1 cup of icing sugar

Combine both mixtures together and mix well!.

Layer this final mixture in a bowl alternating with crushed Oreos!. (450g or 550g bag of Oreos, crushed!.) Top layer should be Oreos!.
