Question: My husbands bday is coming up and were doing a cook out but i need some help with side dishes!!?
Grilling Carne asada, chicken and probably chorizo!. I'm making Pico de gallo and having tortillas with it but i need one side and i'm tired of the regular beans or rice!!

I would like a good pasta salad or potato salad but not the usually with big cherry tomatoes or pickled cubes!.

This is absolutely my favorite pasta salad!.!.!.it is a hit at every family function and potluck!.
It has tomatoes!.!.!.but not chery ones!. You can also omit them, but I tend to enjoy the mix of flavors with them!.

1!.5 lbs of tri color rotini
Kraft Italian Salad dressing
1 large diced cucumber
1 large diced green pepper
8 roma tomatoes, diced about 1/2 in thick
8 oz package of pepperoni
Grated Parmesan Cheese
McCormick Salad Supreme seasoning, to taste

Unfortunately I am not one to ever use exact measurements!.!.!.but as for the veggies they are pretty accurate and once they are cut up you throw them in with the cooked and cooled rotini noodles!. I usually take my pepperonis and cut them in half and toss them in (you can also used diced ham, or no meat at all)!. I then begin to add my italian dressing until all veggies and noodles have a nice coat but not enough to drown them!. I then put in my salad seasoning (which is key) and parmesan cheese until it is throughout entire dish!. I have never had a complaint on this dish!.!.!.even those that cant stand veggies LOVE IT!Www@FoodAQ@Com

Guacamole Salad

1 pint grape tomatoes, halved
1 yellow bell pepper, seeded and 1/2-inch diced
1 (15-ounce) can black beans, rinsed and drained
1/2 cup small diced red onion
2 tablespoons minced jalapeno peppers, seeded (2 peppers)
1/2 teaspoon freshly grated lime zest
1/4 cup freshly squeezed lime juice (2 limes)
1/4 cup good olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon minced garlic
1/4 teaspoon ground cayenne pepper
2 ripe Hass avocados, seeded, peeled, and 1/2-inch diced

Place the tomatoes, yellow pepper, black beans, red onion, jalapeno peppers, and lime zest in a large bowl!. Whisk together the lime juice, olive oil, salt, black pepper, garlic, and cayenne pepper and pour over the vegetables!. Toss well!. Just before you're ready to serve the salad, fold the avocados into the salad!. Check the seasoning and serve at room temperature!.

This salad would go well with your spicy "mixed grill"!. You could use black or red beans in place of peas if you wish!. You can also use lite mayo or a mixture of lite mayo and lite sour crea for the dressing!.


Spicy English Seven-Layer Salad

INGREDIENTS:

2 cups small seashell pasta

4 carrots, peeled and julienned

1/2 head leaf lettuce - rinsed, dried, and chopped

1 medium cucumber, peeled, seeded, and diced

3/4 cup frozen green peas

1/2 cup frozen whole-kernel corn

2 cups mayonnaise

2 tablespoons brown sugar

1 tablespoon cumin powder

1/2 teaspoon garlic salt

1 cup shredded Cheddar cheese

DIRECTIONS:


1!. Bring a pot of lightly salted water to a boil!. Add the pasta, and cook until tender, about 7 minutes!. Drain, and rinse under cold water to cool!.

2!. Place the carrots in an even layer in the bottom of a large glass bowl, preferably one that is roughly the same diameter from top to bottom!. Place the lettuce in a layer over the carrots!. Combine the cucumber, peas and corn; spread in a layer over the lettuce!. Once the pasta is cooled and drained, then spread that out over the top!.

3!. In a smaller bowl, stir together the mayonnaise, brown sugar, curry powder, and garlic salt!. Spread this carefully over the pasta!. Top with shredded Cheddar cheese!. Cover, and refrigerate for at least 1 hour before serving!.

Cook pasta of your choice and toss with Italian dressing and serve warm!. This makes a nice fresh tasting salad or side and you don't have to add anything else unless you want to!. You could add thinly sliced onion (white is best) green or other colored peppers sliced, thinly sliced celery or any other veggie you like!.

A tropical citrus fruit salad would also be good !.!.!.!.!.!.and a bean salad (drained cans of kidney, wax, garbanzo & green beans - mixed with a spicy vignarette dressing)Www@FoodAQ@Com

My favorite pasta salad is made with fusilli pasta!. Once it's cooled down stir in pesto and toasted pine nuts!. Sprinkle with parmesan cheese!. Www@FoodAQ@Com
