Question: I DESPERATELY need a recipe!.!?
my husband's boss's wife's nanny's brother-in-law is coming over for dinner! and it turns out he's actually a famous olypmic ping-pong player!. i really want to impress him! i'm SO nervous and scared!. (if my meal is impressive enough, i might be invited to present him with his medal!) this means SOO much to me and my husband!. i need a recipe with orange juice, portabello mushrooms, and cornflake crumbs (i heard these specific foods help him with his serve)!. also, any additional tips to make this the night of our lives would be greatly appreciated!. thanks! I have a recipe I got from my best friends sisters mother in laws hairdresser that includes all those ingredients!. Soak the portabellos in the orange juice overnight then roll in the crushed cornflake crumbs & broil for 2 min until crispy!. These are great served with a buffalo roast which is also known to help with a ping pong serve!.

CORNFLAKE BAKED CHICKEN

24 chicken thighs or wing drumettes with skin
2 c!. crumbed corn flakes
3/4 c!. reg!. or diet mayonnaise
1/2 c!. milk
1 tsp!. salt
1/2 tsp!. pepper
Non-stick spray shortening

Dip chicken pieces in mixture of mayonnaise, milk, salt and pepper!. Roll in cornflake crumbs!. Spray cookie sheet with shortening!. Bake 1 hour in 400 degree oven!.

PORTABELLOS WITH GOATCHEESE AND
ROASTED GARLIC

4 medium portobello mushrooms
1/2 cup plain goat cheese, softened
2 tablespoons butter, softened
2 tablespoons freshly minced herbs (parsley, basil, thyme)
4 roasted garlic cloves
olive oil

Prepare garlic by slicing through top part of garlic bulb to expose garlic, drizzle with olive oil and wrap loosely in foil!.
Bake 30 minutes at 350°F!. Let cool!.

Mix butter, goat cheese, garlic (when cool), the olive oil drippings, salt, pepper, and herbs!.

Clean mushrooms by wiping with damp paper towel!. Remove stems and discard!. Rub mushrooms lightly with olive oil!.

Grill on medium heat on a gas or charcoal grill!. Alternatively, they can be baked at 350°F for 20 minutes or so, turning once!.

Spread goat cheese mixture on grilled mushrooms!. Leave on the grill for another 5 minutes with the flame off and lid down so that the mixture will melt a bit more!.

Serve and enjoy!

ORANGE JUICE SALAD

3 sm!. pkg!. orange Jello
1 c!. frozen orange juice
1 lg!. can crushed pineapple with juice
2 c!. hot water
2 cans mandarin oranges
2 1/2 c!. cold water

Dissolve Jello and orange juice in 2 cups hot water!. Add rest of ingredients!. Put in oblong pan and chill
