Chicken Parmesan
You could also just buy some already breaded cutlets from the super,market in place of breading your own if you like
Ingredients:
6 boneless, skinless chicken breast halves,
pounded to 1/3-inch thickness

Salt and freshly ground pepper, to taste

4 eggs

2 cups all-purpose flour

3 cups bread crumbs

Vegetable oil for cooking

1 jar (26 oz!.) Pasta Sauce

1 lb!. grated mozzarella cheese


Directions:
Preheat an oven to 400°F!.

Season the chicken breasts with salt and pepper!. In a shallow bowl, lightly beat the eggs with a fork!. Spread the flour on a plate and spread the bread crumbs on another plate!. Dredge the chicken breasts, one at a time, in the flour, then dip into the eggs and coat evenly with the bread crumbs!. Set on a wire rack or a baking sheet!.

In a large sauté pan over medium-high heat, pour in oil to a depth of 1/2 inch and warm the oil!. Add the chicken and reduce the heat to medium!. Cook, turning once, until the crumbs are golden brown and the chicken feels firm when pressed in the center, 2 to 3 minutes per side!. Reduce the heat as needed to prevent the crumbs from burning!.

Transfer the chicken to a large baking sheet!. Spread 1/4 cup of the pasta sauce on top of each piece and sprinkle with the cheese!. Bake until the cheese is melted and bubbling, 10 to 12 minutes!.

Meanwhile, in a small saucepan over medium heat, warm the remaining pasta sauce!. Transfer to a small bowl!. Transfer the chicken to a warmed platter and serve immediately!. Pass the sauce at the table!. Serves 6!.

pizza and pasta are the easiest things to make!. If you have some time, like on a weekend, or even before work, you can always make chicken in a Crockpot!. Buy a 4lb!. chicken!. Cut up some potatoes and put them in the bottom on the crock pot!. Put in about 1 can of chicken broth!. Season your chicken with salt and pepper and maybe some sage ( whatever spices you like)!. Get a box of stovetop stuffing and prepare that!. Stuff the chicken !. Place the chicken in the Crockpot and place the lid on!. Cook on low for 6-8 hours until done!. Mince
1 lb!. Mince!. (beef, pork etc)
1 (10 oz!.) can tomatoes
2 (Med) carrots diced
2 tbsp!. butter
1/8 tsp!. pepper
1/8 tsp!. curry optional
1 tsp!. salt
1 c!. water
1/4 c!. chopped onion
1 tsp!. Worcestershire sauce
Sautee beef in butter and break up with fork!. Stir in onion, salt, pepper, and curry and fry until browned!. Stir in remaining ingredients, cover and simmer!.
You could add more frozen veggies!.
When almost ready thicken with some cornflower as required!.
Serve with mashed potatoes!.

Olive Garden Spaghetti Carbonara

1/4 C!. flour
1/4 C!. butter
1 qt!. milk
1/8 tsp!. pepper
1/2 tsp!. salt
24 slices extra thick bacon, fried until crisp, then cut into ?” slices
1/4 C!. olive oil
3 C!. mushrooms, sliced
6 Tbsp!. scallions, finely minced
1 lb!. spaghetti, uncooked
2 tsp!. fresh parsley, finely chopped
1/2 C!. Parmesan cheese, freshly grated

Melt butter in 4-quart heavy saucepan over medium heat!. Stir in flour and cook for 1 minute!. Add milk, salt and pepper and stir vigorously with wire whip until mixture barely comes to a boil!. Reduce heat and simmer 5 minutes, whipping frequently while sauce thickens!. Keep warm!.

Add bacon into sauce!. Heat olive oil in large skillet over medium heat!. Add sliced mushrooms and minced onions and sauté until golden!. Add to sauce!. Cook spaghetti according to package directions!. Drain well and add to the sauce along with the parsley!. Blend well and transfer to serving dish!. Sprinkle with Parmesan cheese and serve immediately!.

TEXAS HASH

1 lb!. lean ground beef
2-3 large onions, sliced
1 large green pepper, chopped
1 15-oz!. can diced tomatoes (reserve juice)
water to add to juice from tomatoes to equal 3/4 c!. total liquid
1/2 c!. uncooked rice
1/2 tsp!. chili powder
1 tsp!. salt
1/8 tsp!. pepper
Heat oven to 350!. In large skillet, brown ground beef and drain off fat!. Add onions & green pepper; cook and stir until onion is tender!. Stir in rest of ingredients and mix well!. Pour into 2 qt!. casserole dish!. Cover and bake 1 hour !.!.!.!.!. serves 4-6

I like the Tuna Helper Alfredo!. I cook it in a large sauce pan and then I add in some frozen peas, transfer it to a casserole dish and top it with crushed Triscuits!. Use the dry pack tuna then you don't have to drain it!.
