A good sunday meatloaf?!

I can't eat wheat so here is my meat loaf recipe:
Easy Wheat-free Meatloaf
1-1/2 pounds lean ground beef
3/4 cup ketchup
3/4 cup Quaker? Oats (quick or old fashioned, uncooked)
1 egg
1/4 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon black pepper
1!. Heat oven to 350°F!. In large bowl, combine all ingredients, mixing lightly but thoroughly!. Form into a loaf and put in a baking dish!.
2!. Bake 1 hour to medium (160°F) doneness until not pink in center and juices show no pink color!. Let stand 5 minutes; drain off any juices before slicing!.
I usually put the meat loaf in a pan large enough to put peeled and cut up carrots (about 1 inch size pieces) and washed, peeled and cut up potatoes (about 1 and 1 inch cubes) right into the pan around the meatloaf!. Cover the pan tightly for the first 50 minutes, take the cover or foil off for the last 10 to fifteen minutes!.
I usually serve a green vegetable or salad along with the meatloaf, potatoes and carrots!.Www@FoodAQ@Com

Grilled Stuffed Meatloaf
Prep: 25 minutes
Grill: 50-60 minutes
Stand: 15 minutes
2-cups sliced fresh mushrooms
1-medium onion, thinly sliced
1-tablespoon margarine or butter
2-tablespoons snipped fresh parsley
1-slightly beaten egg
1/2-cup rolled oats
1/3-cup milk
3/4-teaspoon salt
1/4-teaspoon pepper
1 1/2-pounds lean ground beef
2-tablespoons catsup
1-teaspoon prepared mustard
Step 1: In a small saucepan cook mushrooms and onion in hot margarine for about 5 minuets or until vegetables are tender!. Stir in parsley!. Cool slightly!.
Step 2: In a medium bowl combine egg, rolled oats, milk, salt and pepper!. Add ground beef; mix well!. Place on waxed paper and flatten to a 12x8-inch rectangle!. Now spoon the mushroom mixture evenly over meat!. Starting at a short end, roll up; pinch seam and ends together to seal!. For sauce, in a small bowl stir together catsup and mustard!.
Step 3: Fold a 24x18-inch piece of heavy foil in half crosswise!. Trim into a 12-inch square!. Cut several slits in the foil!. Place the meat on foil!.
Step 4: For a gas grill preheat 10-15 minutes!. Reduce heat to medium-low on one burner and turn off the other burner!. If using briquettes, place an aluminum drip pan over them!. Place foil with meat loaf over drip pan, cover and grill for 50-60 minuets or until meat is no longer pink, brushing with sauce during the last 5 minutes of grilling!.
Step 5: Remove from grill, cover with foil and let stand for 15 minutes before slicing!.
Makes 6 servings!.
This is a great recipe however I made a few changes you may want to try!.
In step1 I sliced up half a greenpepper and added that to the mushrooms and onions for the stuffing
In step2 I added a 1/4 teaspoon of garlic powder to the seasonings(this is equal to 1 glove of fresh garlic if you should chose to use minced fresh garlic)
Instead of using a pound and a half of ground beef i used only 1 pound and a half pound of Jimmey Deans hot pork sausage (increase cooking time to 1 1/2 hours)
Added couple of dashes of worcestershire to the catsup and mustard sauce!.
This makes a very delicate meatloaf!. Handle gently!.
Broccoli Surprise Salad
2 bunches fresh broccoli
1 small onion, chopped
1/2 cup seedless raisins
10 slices of bacon cooked and crumbled
1/2 cup sunflower nuts
Cut broccoli into small flowerets!. In bowl combine broccoli, onion, raisins, bacon and nuts!. Toss with dressing!. Cover and refrigerate for 3-4 hours before serving!.
Dressing:
1 cup mayonnaise
1/3 cup sugar
2 tablespoons wine vinegar
1/3 cup grated Parmesan cheese
combine all ingredients and mix well
makes 8 servings

1 pkg!. onion soup
Cracker crumbs
1 can mushroom soup
5 or 6 med!. potatoes
4 or 5 carrots
Combine egg, onion soup and enough cracker crumbs to make thick paste!. Add hamburger and mix well, make out into loaf and put into small roaster!. Add the potatoes and carrots which have been washed and cut in half!. Over this pour the mushroom soup!. Bake at 300 degrees!.Www@FoodAQ@Com
