8 ounces elbow macaroni
1 tablespoon olive oil
1 tablespoon all-purpose flour
1/2 teaspoon dry mustard
1 1/4 cups skim milk
1 1/4 cups shredded low-fat extra-sharp cheddar cheese
1/2 cup light ricotta cheese
2 tablespoons chopped green onions
salt
ground black pepper
1/4 cup toasted bread crumbs

Preheat the oven to 375 degrees F!.

Coat an 8" x 8" baking pan with no-stick cooking spray!. Set aside!.

Cook the macaroni according to package directions!. Drain well!.

Meanwhile, heat the oil in a 3-quart no-stick saucepan over low heat; stir in the flour and mustard!. Cook and stir for 1 minute!. Gradually stir in the milk!. Bring to a boil; cook and stir for 1 minute!. Add the Cheddar!. Remove the pan from the heat!.

In a blender or food processor, puree the ricotta cheese!. Add to the sauce!. Stir in the green onions and pasta; add salt and pepper to taste!. Spoon into the baking pan!. Top with the bread crumbs!.

Bake for 20 minutes, or until the top is golden brown!.

12 oz uncooked macaroni, elbow-type
1/2 cup fat-free sour cream
12 oz fat-free evaporated milk
8 oz low-fat cheddar or colby cheese, shredded
1 Tbsp Dijon mustard
1/4 tsp table salt
1/4 tsp black pepper
1/8 tsp ground nutmeg
2 Tbsp dried bread crumbs
2 Tbsp grated Parmesan cheese

Preheat oven to 350oF!.

Cook pasta according to package directions without added fat or salt; drain and transfer to a large bowl!. While pasta is still hot, stir in sour cream; set aside!.

Heat milk in a small saucepan over medium heat until tiny bubbles appear just around the edges (known as scalding)!. Reduce heat to low, add cheese and simmer until cheese melts, stirring constantly with a wire whisk, about 2 minutes; remove from heat and stir in mustard, salt, pepper and nutmeg!.

Add cheese mixture to pasta; mix well!. Transfer to a 3-quart casserole dish!.

Combine bread crumbs and Parmesan cheese; sprinkle over pasta!.

Bake until top is golden, about 30 minutes!. Yields about 1 cup per serving!.

To maximize your choices, use whole-grain pasta, boil 2 cups!.
Make a white sauce, melt 2 tbsp butter or oil with 2 tbsp of flour!.
Whisk over medium heat until smooth & golden yellow!.
Add 2 cups of milk & whisk until smooth & thickened!.
Add 1 cup of grated cheeses, cheddar, mozzarella, asiago, etc!.
Stirring in a little at a time to melt but not curdle or get stringy!.
Pour over pasta, mixing to coat thoroughly, then transfer to baking dish & bake in 400F oven until bubbly & golden on top!.Www@FoodAQ@Com

What You Do
Bring a large pot of lightly salted water to a boil!. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve!.
In a microwave-safe bowl, combine milk, flour and salt and pepper to taste; whisk or beat until smooth!. Add butter and cheese; microwave on high for 5 minutes and whisk until smooth!. Microwave for an additional 4 to 5 minutes and whisk or beat until smooth and no lumps remain!.
Add cooked pasta to mixture; stir and serve!.
