I need a good recipe for Sweet Cassava Pudding?!
My girlfriend told me it's her mum's favourite so I am going to make it for her to attempt to make peace with her, any suggestions!?Www@FoodAQ@Com

Ingredients:
800g/28oz fresh Cassava, peeled and grated
75g/3oz Shredded Coconut
1 tbsp freshly grated Root Ginger
225g/8oz Sugar
4 Cloves, lightly crushed
Instructions:
1!. Place all the ingredients in a large mixing bowl and blend well!.
2!. Divide the mixture in four and place each portion in the centre of four pieces of foil or traditionally on banana leaves!.

Sweet Cassava Pudding
2 medium sweet cassava
2 cups brown sugar
2 eggs beaten
1 whole grated nutmeg or 2 teaspoons
3 oz!. Margarine
2 cups coconut milk
? cup raisin
1 teaspoon cinnamon powder
1 teaspoon baking powder
1 teaspoon vanilla
? cup warm water
Preheat oven to 350 degrees
Wash and grate cassava with a fine grater
Combine the cassava, coconut milk, sugar, nutmeg, cinnamon and mix
Combine this and the rest of the ingredients with the beaten eggs and mix!.
Slowly add the ? cup of warm water and stir well
Bake in greased baking tin for once over
Serve warm with additional golden sauce (see recipe below) or caramel spooned over individual servings!.
*Golden Sauce*
3 teaspoon butter
? cup sugar
1 cup whipping cream 1
Combine butter and sugar in a medium pan!.
Cook and stir over low heat until the butter is melted!.
Add cream and stir in cream
Bring to a boil while stirring!.
Stir uncovered until the sauce has thicken
Serve with pudding or refrigerate!.
If refrigerated reheat when serving

The sweet potato traditionally used in this is the African white/yellow sweet potato which has a very mild flavour though the pudding still works with red sweet potato!.

grated zest and juice of 1 orange
2 tbsp butter
1 egg, separated

Method:
Add the sweet potatoes to a pan of salted water, bring to the boil and cook until soft (About 10 minutes)!. Drain, place in a bowl and mash!.
Add all the remaining ingredients (except egg white) and mix together!. When done beat the egg white until stiff and carefully fold into the mixture!.
Spoon in to a greased 22cm dish or casserole and bake for about 45 minutes at 170°C, or until golden brown in colour!. Www@FoodAQ@Com
