I have started frying my eggs this way since I watched the video about 2 weeks ago!. There is absolutely no jelly like soft white on top and there is no need to trying to turn the egg over and almost burst the yolk!. There is a water trick that really makes it look and taste perfect!. BUT: you have to hear the POPs !!! Wow !.!.!. a treat for the eyes and the ears!.Www@FoodAQ@Com

It's quite simply air and oil trapped under the egg as it cooks!. As it becomes super heated, it escapes from around the egg, the force of it escaping throws out fat!.Www@FoodAQ@Com
