CHICKEN SPAGHETTI CASSEROLE
INGREDIENTS!.!.!.!.!.!.!.!.!.!.!.
3 cups cooked, cubed chicken meat
8 ounces spaghetti, broken into pieces
1/4 cup chopped pimento peppers
1/4 cup chopped green bell pepper
1/2 cup chopped onion
1 (10!.75 ounce) can condensed cream of mushroom soup
1/4 cup white wine
2 cups shredded Cheddar cheese
salt and pepper to taste
DIRECTIONS
Put uncooked spaghetti in a large pot of salted boiling water!. Let simmer, stirring occasionally, for 8 to 10 minutes or until pasta is al dente!. Drain!.
Preheat oven to 350 degrees F (175 degrees C)!.
In a large bowl combine the chicken, cooked spaghetti, pimento, bell pepper, onion, soup, wine and 1 cup of the cheese!. Season with salt and pepper to taste and mix all together!. Spread mixture into a 9x13 inch baking dish and bake in the preheated oven for 30 minutes!. Sprinkle remaining cup of cheese on top and bake for another 15
minutes!.

TACO CASSEROLE
INGREDIENTS!.!.!.!.!.!.!.!.!.!.!.!.!.!.
1 pound lean ground beef
8 ounces macaroni
1/2 cup chopped onion
1 (10!.75 ounce) can condensed tomato soup
1 (14!.5 ounce) can diced tomatoes
1 (1!.25 ounce) package taco seasoning mix
2 ounces shredded Cheddar cheese
2 ounces shredded Monterey Jack cheese
1 cup crushed tortilla chips
1/2 cup sour cream (optional)
1/4 cup chopped green onions
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!.
Cook pasta in a large pot of boiling water until al dente!. Drain!.
In a large skillet, cook and stir ground beef and chopped onion over medium heat until brown!. Mix in tomato soup, diced tomatoes, and taco seasoning mix!. Stir in pasta!.
Spoon beef mixture into a 9x13 inch baking dish!. Sprinkle crumbled taco chips and grated cheese on top!.
Bake for 30 to 35 minutes, until the cheese is melted!. Serve with chopped!.

CHILI RELLENOS CASSEROLE
INGREDIENTS!.!.!.!.!.!.!.!.!.!.!.
2 (7 ounce) cans whole green chile peppers, drained
8 ounces Monterey Jack cheese, shredded
8 ounces Longhorn or Cheddar cheese, shredded
2 eggs, beaten
1 (5 ounce) can evaporated milk
2 tablespoons all-purpose flour
1/2 cup milk
1 (8 ounce) can tomato sauce
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!. Spray a 9x13-inch baking dish with cooking spray!.
Lay half of the chilies evenly in bottom of baking dish!. Sprinkle with half of the Jack and Cheddar cheeses, and cover with remaining chilies!. In a bowl, mix together the eggs, milk, and flour, and pour over the top of the chilies!.
Bake in the preheated oven for 25 minutes!. Remove from oven, pour tomato sauce evenly over the top, and continue baking another 15 minutes!. Sprinkle with remaining Jack and Cheddar cheeses, and serve!.

SAUSAGE CASSEROLE
INGREDIENTS!.!.!.!.!.!.!.!.
1 pound sage flavored breakfast sausage
3 cups shredded potatoes, drained and pressed
1/4 cup butter, melted
12 ounces mild Cheddar cheese, shredded
1/2 cup onion, shredded
1 (16 ounce) container small curd cottage cheese
6 jumbo eggs
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C)!. Lightly grease a 9x13 inch square baking dish!.
Place sausage in a large, deep skillet!. Cook over medium-high heat until evenly brown!. Drain, crumble, and set aside!.
In the prepared baking dish, stir together the shredded potatoes and butter!. Line the bottom and sides of the baking dish with the mixture!. In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs!. Pour over the potato mixture!.
Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean!. Let cool for 5 minutes before serving!.

LASAGNA
INGREDIENTS!.!.!.!.!.!.!.!.!.!.!.
9 lasagna noodles
1 tablespoon olive oil
1 pound ground beef
1 pound bulk Italian sausage
1 (16 ounce) can sliced mushrooms, drained
1 teaspoon garlic salt
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon dried basil
4 (15 ounce) cans tomato sauce
salt and pepper to taste
1 (15 ounce) container ricotta cheese
3 eggs, beaten
1/3 cup grated Parmesan cheese
1 pound shredded mozzarella cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!.
Bring a large pot of lightly salted water to a boil!. Add the lasagna noodles and olive oil; cook until al dente, 8 to 10 minutes; drain!.
Cook the ground beef and sausage in a large pot over medium heat; drain!. Stir in the mushrooms, garlic salt, oregano, thyme, basil, and tomato sauce!. Season with salt and pepper; simmer 30 minutes!.
Meanwhile, mix together the ricotta cheese, eggs, and Parmesan cheese in a bowl!.
Ladle enough of the meat sauce into a 9x13 inch baking dish to cover the bottom in a thin layer!. Form a layer atop the sauce with 3 of the lasagna noodles!. Spread about 1/4 of the ricotta cheese mixture over the noodles!. Sprinkle about 1/3 of the mozzarella cheese over the ricotta cheese mixture and then ladle about 1/3 of the meat sauce over the mozzarella cheese!. Repeat layering twice more, topping with the remaining 1/4 pound of mozzarella cheese!.
Bake in preheated oven 90 minutes!. Allow to sit 10 to 15 minutes before serving!.

BAKED ZITI
INGREDIENTS!.!.!.!.!.!.!.!.!.!.!.!.!.
1 pound dry ziti pasta
1 onion, chopped
1 pound lean ground beef
2 (26 ounce) jars spaghetti sauce
6 ounces provolone cheese, sliced
1 1/2 cups sour cream
6 ounces mozzarella cheese, shredded
2 tablespoons grated Parmesan cheese
DIRECTIONS
Bring a large pot of lightly salted water to a boil!. Add ziti pasta, and cook until al dente, about 8 minutes; drain!.
In a large skillet, brown onion and ground beef over medium heat!. Add spaghetti sauce, and simmer 15 minutes!.
Preheat the oven to 350 degrees F (175 degrees C)!. Butter a 9x13 inch baking dish!. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture!. Top with grated Parmesan cheese!.
Bake for 30 minutes in the preheated oven, or until cheeses are melted!.

KING RANCH CASSEROLE
INGREDIENTS!.!.!.!.!.!.!.!.
1 (10!.75 ounce) can condensed cream of chicken soup
1 (10!.75 ounce) can condensed cream of mushroom soup
2 cups chicken broth
1 (10 ounce) can diced tomatoes with green chile peppers
1 (12 ounce) package corn tortillas
3 cups cooked, diced chicken breast meat
1 onion, chopped
1 green bell pepper, chopped
8 ounces shredded Cheddar cheese
1 1/2 teaspoons chili powder
1 teaspoon garlic salt
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!.
Combine the chicken soup, mushroom soup, broth and tomatoes with chiles!. Set aside!.
Lightly grease a shallow 3 quart casserole dish!. Layer 1/2 the tortillas, 1/2 the chicken, 1/2 the onion, 1/2 the bell pepper and 1/2 the cheese in the casserole dish!. Pour 1/2 of the soup mixture over the layers!. Repeat the layers of tortillas, chicken, onion and bell pepper; pour the remaining soup mixture over the top, then top with the remaining cheese!. Sprinkle with chili powder and garlic salt and bake for 30 to 45 minutes!.

TURKEY TETRAZZINI
INGREDIENTS!.!.!.!.!.!.!.!.!.!.!.!.
1 (8 ounce) package angel hair pasta
2/3 cup sliced onion
1/4 cup butter
1/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon ground white pepper
1/2 teaspoon poultry seasoning
1/4 teaspoon ground mustard
2 cups milk
1 cup shredded sharp Cheddar cheese
2 tablespoons chopped pimento peppers
1 (4!.5 ounce) can sliced mushrooms
1 pound cooked turkey, chopped
DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C)!. Bring a large pot of lightly salted water to a boil!. Add the pasta and cook for 4 minutes, or until almost tender!. Drain!.
Melt the butter in a saucepan over medium heat!. Add the onion; cook and stir until tender!. Stir in the flour until blended, then gradually stir in the milk so that no lumps form!. Season with salt, pepper, poultry seasoning and mustard!. Cook over medium heat, stirring constantly until the mixture thickens!. Remove from the heat and add 2/3 cup cheese and pimento, stirring until cheese melts!. Add undrained mushrooms to cheese sauce!.
Place a layer of pasta in the bottom of a 9x13 inch baking dish!. Cover with a layer of turkey, and then a layer of cheese sauce!. Repeat the layers!. Sprinkle remaining 1/3 cup cheese over top!.
Bake for about 25 minutes in the preheated oven, until sauce is bubbly and cheese on top is toasted!.

Chicken Enchilada Casserole


1 – 1 ? lb boneless chicken, cut into bite size chunks
1 can cream of mushroom soup
1 - 8 oz carton sour cream
1 small can chopped Ortega green chiles
1 sml package flour tortillas, cut or torn in small pieces
8 oz jalapeno or regular jack cheese, grated


Cook chicken in skillet with a little water and ? tsp garlic salt or powder, until no longer pink Remove and reserve!.

In a bowl combine the next four ingredients, plus 6 oz of the cheese, add the chicken!. Mix well and place in greased casserole dish!. Top with remaining cheese and bake at
350 F for 1 hour!.


Serving suggestions: Mexicorn and Mexican rice!.




Overnight Hashed Brown Potato Casserole

Ingredients:

(8 servings)
2 lb Frozen hashed brown potatoes
1/4 lb Butter
1 pt Sour cream
1 can Mushroom soup
8 oz Cheddar cheese; shredded
1 Onion; grated or 1 T!. instant minced onion
3/4 c Milk* (optional)


Instructions:

Cut butter into potatoes!. Mix rest of ingredients together; pour over top of potatoes!. Toss!. *1/4 - 3/4 c!. milk can be used in place of one-half of the sour cream!. It will make a moister casserole, if desired!. Bake in a 13x9" pan at 350 for 1/2 hr covered and an additional 1/2 hr!. uncovered!. I have used Cheddar Cheese soup, but reduce the butter as it will be greasy with both!. I also put additional shredded cheese on top during the second half hour of baking!. Doubles well!. Can be refrigerated overnight after mixing all together!.



Super Broccoli Casserole

2 boxes or 1 bag frozen, chopped broccoli, cooked and drained
2 eggs beaten
1 sml onion, minced
1 can cream of mushroom soup
? cup mayonnaise
1 cup grated cheddar, jack, or mozzarella cheese
1 cup cracker crumbs
? cup butter

Combine first 6 ingredients; add to buttered 9x11 casserole dish!. Sprinkle with cracker crumbs and dot with butter!. Bake at 350F for 1 hour!.

Vegetable Casserole
1 (10 oz!.) mixed vegetables (frozen)

1/2 c!. chopped celery

1/2 c!. onions

Cook as directed on package!. Do not add salt!. Drain well!. Add: 2 c!. Hellmann's mayonnaise

Add:
1 c!. shredded American cheese

Top with crushed Ritz crackers, 1 sleeve!. Microwave 5 minutes!.

Pizza Noodle Casserole

8 oz!. noodles, cooked and drained
1 pound ground beef
1 tbsp!. oil
1 can (4 oz!.) mushrooms, drained
4 oz!. pepperoni, chopped
1 can (15 oz!.) pizza sauce
2 cup cheddar cheese
1 cup mozzarella cheese, shredded

Preheat oven to 375° F!.

Brown ground beef in oil!. Mix in mushrooms, pepperoni, pizza sauce and cheddar cheese!.
Put cooked and drain noodles in greased baking pan!. Pour sauce mixture over the noodles and top with mozzarella cheese!.

Bake 30 - 25 minutes or until hot and bubbly!.

Serves 6

Italian Baked Ziti Casserole

One pound ground meat
One 28 oz!. jar prepared spaghetti sauce (or your own homemade sauce)

One 16 oz!. package of ziti noodles

Parmesan cheese

Brown hamburger and pour off excess fat!.

Cook ziti according to package directions!. Drain pasta!.

Mix meat, spaghetti sauce and pasta!. Place in greased casserole dish and sprinkle with cheese!.

Bake in 375 degree oven for twenty minutes or until golden brown on top!.

Tater Tot Casserole!.

Brown some ground beef and press it into the bottom of a 9x13 pan!.

Add:

Family size can of cream soup, or a regular size can plus a can of milk
A can of corn, peas or green beans, or small pkg of frozen
Layer with slices of cheddar or American cheese
Put tater tots on top to cover

Bake at 350 for 45 minutes!.

Corned Beef Casserole (my husband's fave)

2 cans of corned beef or 1!.5 pounds of corned beef from the deli
egg noodles
can of cream soup
Sauerkraut
American cheese
Potato chips

Noodles on the bottom, cream soup plus can of milk, Sauerkraut, layer American cheese, potato chips on top!.

Bake at 350 for 45 minutes!.

Chicken Casserole

Rotisserie chicken or roast a whole chicken yourself and cut up
Minute Rice (I use brown)
Chicken Broth
Cream Soup
Shredded cheddar
Ro-Tel Mexican diced tomatoes!.

Rice in the bottom with water to cover
Can of chicken broth
Chicken
Cream Soup
Tomatoes

Bake for 30 minutes at 425!. Lower oven to 350 and add shredded cheddar (about a cup) to the top!. Bake for another 30 minutes!.


LASAGNA!.

1!. Mix together ricotta or cottage cheese, shredded mozzarella and shredded parmesan with 1 teaspoon of oregano or Italian seasoning or a small envelope of powdered Italian dressing!.

2!. Mix together a large jar (or 2 regular size) of pasta sauce (I like Paul Newman's Marinara when I'm feeling indulgent but any kind will do)!. A small package of frozen spinach, a can of tomato paste and a pound of ground beef or 1/2 pound of ground beef mixed with 1/2 pound of Italian sausage!.

3!. Layer!. Start with a separate regular size jar of pasta sauce on the bottom or even just tomato sauce mixed with minced garlic!. Layer no-boil noodles!. Meat sauce!. No boil noodles!. Cheese mixture!. No boil noodles!. Meat sauce!. No boil noodles!. Meat sauce!. Cheese mixture on top!.

4!. Bake at 400 for an hour!. Tastes even better kept overnight in the fridge and baked the next night!.Www@FoodAQ@Com
