I'm not a big fan of traditional coleslaw, but this one has won me some praise and it's very easy and beautiful, and not very traditional at all!.
4 cups finely shredded red cabbage
1 1/2 cups finely shredded carrots (or julienne cut)
1 cup chopped celery (I cut it on an angle for long thin slices)
1/4 cup light mayonaise
2 Tbsp honey or sugar
2 Tbsp cider vinegar (or red or white wine vinegar if you prefer)
1 Tbsp dijon mustard
1 Tbsp curry powder
salt and pepper to taste
Combine mayo, honey, vinegar, mustard, and curry powder and whisk until smooth!. Check for taste and adjust if necessary!. Pour over vegetables and toss to coat!. Season to taste with salt and pepper!. I hope you love it!. ^_~Www@FoodAQ@Com
