Brown meat in large pot!. If you're using venison, or other extremely lean ground meat, you may need to add some cooking oil to keep the meat from sticking and burning to the bottom of the pot!. When meat is nearly browned add celery, onions, garlic, and peppers and cook with meat until onions are partially translucent!.
Mix in the rest of the ingredients!. If you like it extra hot, add half a dozen dried red peppers!. Simmer for 2 hours stirring occasionally!.
If you like, add 1/4 bottle of stout or other dark beer, and drink the rest!. Simmer for 1 more hour!. Remove bay leaves, and serve!.
Helpful Hints
For garnish sprinkle with chopped onions and grated cheddar cheese!.
Serve with fresh cornbread!.

I like doing it with a pot roast and shredding instead of ground beef, I think it tastes better personally!. What I do is in a big crock pot, put in my roast, dump in a big can of chopped fire-roasted tomatoes (undrained) or two, a medium or large can of tomato sauce, a chopped onion or two, and pour in beer of your choice to cover!. Let cook all day until it's falling apart!. Take the roast out and let cool!. To the rest, add two or 3 little cans of tomato paste and stir to mix, then add chili powder to taste, I use about 1/4 cup worth, but depending on how spicy you like it, add more or less!. I also add in a couple chopped jalapenos, some minced garlic, salt and pepper, and beef broth to thin to the desired consistency!. If you like beans in your chili rather than all meat, add them now (canned kidney beans, black beans, blackeyed peas work well, drain and rinse) Shred your roast, pick out any big hunks of fat, and stir the shredded beef back into the pot!. Let simmer for a half hour or so!. I serve with a dollop of sour cream and some shredded cheddar and chopped green onions on top!.

Brown the ground beef and drain if necessary, We don't want a bunch of grease floating on this!.
Stir in Bueno or Hatch frozen red chile puree, 2 cartons of water, 2 tablespoons flour, 2 teaspoons salt, 1 teaspoon oregano, garlic if desired, and one of cilantro!.
Turn down the heat and simmer this stirring frequently for about 2 hours!.
I say the Bueno or Hatch because that is what I use!. You could get the Old El Paso canned enchilada sauce and leave out the oregano, garlic and cilantro if you like!. also I only ever use the HOT in any of them!.
Now to make it Tex Mex or Ariz or any other variation: add Cooked pinto beans, rice, or whatever else you desire to it!.
The above is pure New Mexico Chile con Carne!!Www@FoodAQ@Com
