It could be that your oven is not hot enough (we are talking roasties here right!?!?) or that you use the wrong oil!. Animal fats (traditionally goose fat) are suppposed to make the crispiest ones, or use vegetable oil - other oils dont work so well!. (olive oil has a lower smoke/boil point for example than the veg oil)
Try par boiling (bring potatoes to boil then simmer for 2 minutes), then a trick my mum taught me was to sprinkle all over with plain flour after boiling and before putting into the oven!. After sprinkling with flour, carefully place them into oil or fat that is already hot, baste with the oil then put in the oven for around an hour at around Gas - 4, 180 C, 350 F!.

try cooking them in a fry pan, on the stove!.
fill the pan about 1/3 of the way with oil!. i've tried it with olive oil, but vegetable oil would probably be a better choice!.
make sure the temperature is about med-high to high!.
once the oil is just about hot enough, add the potatoes, making sure the potatoes are cut up quite small (abt 1inch thick cubes), or sliced, watever u prefer!.
season with salt/pepper, or watever!.
let them crisp up on each side, becareful not to let them burn!.
and they should be good to go!. : )
good luck!.
making them in the oven!.!.!.is a longer process!. : /

boiling them make them soft!. and putting more oil in soft potatoes makes them more soft, and why are you putting bread crumb in soft potatoes!?
to make potatoes crunchy you fry them in oil, you cut up the potatoes in slices or fries shaped and put them in hot oil to fry!. Or you can bake them in thin slices/fries till crisp!.Www@FoodAQ@Com

Crunchy!? Slice your potatoes thinly and cook them longer till they turn brown!. Then you have crunchy potatoes!!!
Or else, there are 2 types of potatoes, one is the soft type and another the crunchy type!. Most likely you bought soft potatoes, best for mashing or soups!. The crunchy potatoes are usually washed potatoes; soft ones are brushed!. BEST OF LUCK :)Www@FoodAQ@Com

you need to deep fry them twice!. Once at around 250 until slightly brown, this removes most of the water!. Take out of the grease and let cool on paper towels and dab off extra grease!. Then jack up the heat to 375 and fry again until golden brown!.Www@FoodAQ@Com
What kind of potatoes are you trying to make!? But boiling will just make them soft!. You probably need to use a bit higher heat to sear the outside a bit!. But without knowing what you're making it's hard to say for sure!.Www@FoodAQ@Com
if it's french fries you're talking about, you probably should use a deep fryer!. also, use peanut oil!. it's good for frying and can take the heat!. Www@FoodAQ@Com
i dont think you can get crunchy potatoes!.Www@FoodAQ@Com
I'm not sure why you would want them crunchy but the answer must be to eat them raw!.Www@FoodAQ@Com
ok if you are trying to fry them make sure they are dry!. anytime water comes in contact with oil it will make mushy soft potatoes!. Try to pat them dry first!.Www@FoodAQ@Com
