2 cloves garlic, crushed and minced
1 large onion, quartered and thinly sliced
1 small eggplant, cubed
2 green bell peppers, coarsely chopped
4 large tomatoes, coarsely chopped, or 2 cans (14!.5 ounces each) diced tomatoes
3 to 4 small zucchini, cut into 1/4-inch slices
1 teaspoon dried leaf basil
1/2 teaspoon dried leaf oregano
1/4 teaspoon dried leaf thyme
2 tablespoons chopped fresh parsley
cut it all up and put it in a large sheet and bake it!.!.!. add extra tomato juice to add up for the oil you are omitting!.

There is absolutely no food or recipe that is unhealthy except for the serving sizes some people insist on eating!.
Any thing you cook is healthy!. At least it is as long as you don't eat more than one serving of it!.
A serving of a casserole is about one cup or a 4 inch square of it!.
a serving of any meat is 3 ounces cooked which is about as much as one chicken thigh!.
a serving of fruit or veggie is 1 cup raw and 1/2 cup cooked!.
breads are 2 slice or 2 biscuit
If you need to lose weight just eat half of any serving except meat, or green leafy salads!.

I fry my chicken in the oven!. This lowers the fat content considerably!. Use white meat and remove the skin, then flour your chicken in highly seasoned flour, then place meaty side down on a cookie sheet (with sides, of course) that's got about 2-3 tablespoons cooking oil spread on it!. Bake at 350 degrees Fahrenheit for about 30 minutes, turn each piece over, and bake 30 minutes more!. (For boneless chicken, use 15-20 min per side!.) With so little oil for the whole batch, you get very little on each piece -- but that wonderful home-fried chicken taste in unbeatable!.Www@FoodAQ@Com
