What do with left over heavy (whipping) cream ??!
Seems like whenever a recipe calls for heavy cream, I'm left with "what to do" with the rest of container!. I read somewhere that you shouldn't freeze it -- so does anyone have any quick tips or easy recipes for the everyday cook!?Www@FoodAQ@Com

make biscuits or scones, make a creamy rich decadent pudding by using 1/2 milk and half heavy cream!. whip it into butter!.

I make fruit ambrosia every few weeks!. My grandkids love it!. You can cut down the recipe to accomodate how much cream you have left!.!.!.If you end up with proportionately more fruit, that's even better!
FRUIT AMBROSIA
2 c!. heavy whipping cream
1/2 c!. sugar
1 tsp!. vanilla extract
1/2 tsp!. almond extract
1 large can mandarin oranges, drained
2 large cans fruit cocktail, drained
3-5 c!. miniature marshmellows
Beat cream, sugar & extracts to very stiff peaks!. Fold in fruit & marshmellows and chill !.!.!.!.!.!.!.
Yes, you can freeze whipped cream, and eat it frozen:) (It might get weepy if it thaws out though !.!.!.!.!.!.MUD PIE: You could put some chocolate syrup in the bottom of a graham cracker pie crust; then fill with softened ice cream; another layer of chocolate syrup and sweetened whipped cream on top !.!.!. freeze and eat frozen Www@FoodAQ@Com

I make a frozen chocolate mousse pie!. it's SO easy!.
make a small box of chocolate pudding with half the amount of milk, and let cool till room temp!.
whip whatever amount of cream you have left till it's VERY stiff!.
gently fold the cream into the pudding (you can leave some white streaks in it if you want)
pour into a cookie-based crust (they sell premade chocolate, vanilla and graham)
cover, and freeze till set!.

You can always use it to make a quick potato soup!. Put 2 Tbs butter in pot brown leeks,(or onion reg or green) with a chopped stalk or two of celery!. Cook until onion or leak is soft and tender!. Add some salt and pepper, and cream!. Boil diced potatoes in seperate pot until tender!. Add to cream mixture and cook at medium heat(do not boil, cream can get nasty fast)!. It is also good with some carrots!. Total cooking time is about 30-45 minutes!. Other seasonings to use in addition is bay leaf, sage, basil, parsley, season salt!. Ask your dairy market manager to get half pint containers of whipping cream then you won't have left overs!.
I like putting the heavy cream in my flavored coffees!! Musn't purchase much of that very often as I might someday get fat drinking it!.
