In fact, I don't eat dark meat chicken at all, so when I make jerk chicken I always use breasts!.
As long as you use Canola oil or Olive oil in your marinade instead of vegetable or a high saturated fat type oil, it is quite healthy!.

yes it is ok to use the chicken breast (its better for you than the dark meat) dark meat is oilier and has more fat!. I think jerk chicken is healthy as long as you use a jerk rub, opposed to a marinade!. Www@FoodAQ@Com
