MY OWN PERSONAL RECIPE:
1egg
1 cup buttermilk or regular milk (substitute buttermilk- stir in 1 tsp of vinegar to 1 cup of milk let it sit for 5 minutes)
1 tsp baking soda
1 cup flour
1 Tbsp sugar
1 Tbsp oil
1 1/2 tsp baking powder
1/2 salt
Beat eggs, buttermilk & soda!. Add flour, sugar, oil, baking powder, and soda!. salt, Stir till blended!. NOT BEATEN!!!
Have your griddle med hot lightly oiled or spray with Pam!. Pour a soup ladle full on the griddle!. Mine holds 3 mediums or 4 smalls at one time!. reduce heat a bit!. When holes form on top gently flip!. Cook a few minutes more till soft firm & brown!. Remove to plate, add butter or margarine while hot!. If you want pecans or chocolate chips or blueberry etc!. put them on wet batter right after you pour it on the griddle so they will sink in the batter!. Peanut butter & bananas are my favorite!. That goes on after they are done!.Www@FoodAQ@Com

First, make sure your baking soda and baking powder are fresh, within date!. Check the date stamp on them; OR if you can't remember buying them, buy new!.
Another big mistake w/ pancakes is getting the heat too high!. Med-low is best!.
also, don't make pancakes bigger than the spatula you're going to flip them with!. And they WILL spread, so stop pouring batter before they are the same size as yoru spatula!.
The Best Buttermilk Pancakes
1 cup Buttermilk**
1 egg, room temp
3 Tbsp butter, melted
? cup all purpose flour
? tsp salt
1 tsp baking soda
Put the buttermilk, egg and melted butter in a mixing bowl!. Stir briskly until the mixture is smooth and blended!.
Stir the flour, salt and baking soda together in a small bowl!. Stir into the buttermilk mixture only until the dry ingredients are moistened - leave the smaller lumps!.
Heat a skillet or griddle to medium hot!. Grease lightly and spoon out a 3 TBLS of batter per pancake!. Cook until a few bubbles form on top and break!. Flip the pancake over and cook until golden brown!.!.not too long!.
These are the best pancakes and nothing else will compare after having these!!! Enjoy!.
Makes about 6-8 pancakes!.
**To make your own buttermilk, add 2 tsp of lemon juice or vinegar to a scant cup of milk, stir, and let sit at room temp for 15-30 min!. Stir again before adding to recipe!.

I never have time to make it from scratch so I always just use a box and for the thickness it should be thick enough that if you pull the spoon out and let it drip that it leaves a shape!.!. but only an outline!.!. if it doesn't sink in its too thick and if there is no shape what so ever then it is too thin!. the pan should be hot enough and not hotter than to have water (just a few drops) be splashed on to the pan and evaporate in about 1-2 seconds!.!. use a ladle to pour a decent sized pancake on to the pan and flip ONLY ONCE!.!. I use a fork to check the bottom to see if its right!.!. It may take a few times but I have always gotten pancakes that taste great and look fake doing this!.!. If I was too vague or anyone has a question feel free to message me!Www@FoodAQ@Com
Don't overbeat the batter!. also, make sure your baking soda or baking powder is not old!. It's cheap enough to buy that you may want to replace what you have!. also, make the pancakes or waffles soon after mixing the batter!. Those tips aren't necessarily listed in the recipe!.Www@FoodAQ@Com
Since most of the batter question have been answered i'll skip ahead!.!. You want the sides to be a nice golden brown!. Take a little peak when you see the bubbles on the top start to pop!. After you flip it over, let it rise for about 30 seconds!. Then, take your utensal and press GENTLY on the pancake!.
Oh and it's all in the batter bro!.Www@FoodAQ@Com

A37licia's answer is good!. You can also try separating the eggwhite and beating it, before you fold it into the batter!. Www@FoodAQ@Com
just follow the recipe EXACTLY!. and maybe get a new recipe!. maybe that one sucks!. good luck!Www@FoodAQ@Com
The first problem = Baking!. You don't bake pancakes!. Cook them on a griddle!.Www@FoodAQ@Com
