Question: Whats a good mexican dish or dessert !?
A lady I go to church with is having a little get together and she wants to have like mexican dishes and everyone is bringing your usually stuff like seven layer dip nachos tacos burrito but nobody is bringing desserts so whats a good recipe that can knock their sombreros off!. Www@FoodAQ@Com

I don't have a recipe, but it's so hard to resist a tres leches cake!. It's probably best to go to a bakery and pick one up as I hear they are difficult and very time consuming to make, but oh, they are sooooo good!Www@FoodAQ@Com

Sopapillas are yummy! Here's a recipe for them!. They are also good drizzled with honey and/or served with vanilla ice cream!.


INGREDIENTS:
4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
4 tablespoons shortening
1 1/2 cups warm water
2 quarts oil for frying


DIRECTIONS:
In a large bowl, stir together flour, baking powder, salt and shortening!. Stir in water; mix until dough is smooth!. Cover and let stand for 20 minutes!.
Roll out on floured board until 1/8 to 1/4 inch thick!. Cut into 3 inch squares!. Heat oil in deep-fryer to 375 degrees F (190 degrees C)!. Fry until golden brown on both sides!. Drain on paper towels and serve hot!.Www@FoodAQ@Com

BAKED CHICKEN CHIMICHANGAS

3 frozen boneless skinless chicken breasts
1 onion, chopped
1 green pepper, chopped
1 sm can green chilis, chopped
pkg of flour tortillas (8-10")
2 cups pkg sharp cheddar, shredded
1-2 cups mild salsa
spices and condiments, to taste
vegetable oil spray

Preheat oven to 425o!.
Place frozen chicken breasts on chopping block while you sauté the onion and peppers in small amount of oil!.

Slice the frozen chicken into narrow strips, then crosswise until you have small 1 1/2 - 2 inch strips!.

Remove onion mixture to a medium bowl and add chilis and 2/3 cup of salsa!.

Place frozen chicken strips into a skillet and season with cumin, salt, pepper, garlic or herbs of your choice!. Add a splash of oil if necessary!.

Stir-fry for 3 to 5 minutes!. Remove contents of skillet to a bowl and set aside (cover and store at this point if making ahead!.)

Open a fresh package of tortillas!. If not moist, cover and microwave briefly, as directed!.

Place a 1/8th portion just below middle of wrap!. This is usually about 1/2 cup!. Cover with cheese and fold up bottom, then sides, then top!. Spray wraps with oil, and lay out on a foil-covered and oil sprayed cookie sheet!.

Bake for 8 minutes!. Flip and bake 5 minutes more!.

Remember, everything is fully cooked!. You only need to warm the filling, melt the cheese and toast the tortilla!.


Serve accompanied by one of the following:

Spanish rice, black olives, sour cream, more salsa, bean salad, green salad ingredients!.
Cover a cookie sheet with foil and spray!. Lay tortillas out and spray top of wrap!.

You can substitute any flavored tequilla for the Almendrado!. Almendrado is an almond flavored tequilla!. I would also substitued the almond extract with either vanilla or some other if you aren't going to use the almond tequilla!.

ALMENDRADO HOLIDAY CAKE


350 Degrees 55 minutes

1 Package Yellow Cake Mix
1 Package Vanilla Instant Pudding
4 Eggs
? Cup Oil
? Cup RESERVA DEL SENOR ALMENDRADO TEQUILA
? Cup Milk
1 Teaspoon Nutmeg
? Teaspoon Almond Extract

Beat at Medium Speed for 5 Minutes!. Bake in Bundt Cake Pan, Sprinkle with Powdered Sugar when done… ENJOY!!


If you want to add a glaze on top, mix a little fruit juice with powdered sugar and drizzle over the top!.Www@FoodAQ@Com

Cut flour tortillas into strips, then half again!. deep fry them and drain well!. Coat them in a sugar and cinnamon mixture!. Easy andyou wont have to worry about any thing spoiling!.Www@FoodAQ@Com
