I'm not sure why you want to know about vegetable soup, so I'm just going to give you an answer about veggies in general!.

-Depending on how old your kids are, you could show them a few "Veggie Tales" videos!. That might make them change their mind about veggies!.

-Set up a vegetable tray with: olives, baby carrots, green peppers, broccoli, and basically any other kind of veggie that can be finger food!.

-Reward them when they finish the veggies on their plates!. Start off giving them just a small helping of veggies!. Make a chart that has a specific goal that they want to reach (like a bike, or a toy, or something), and every time they finish their veggies, add a star to the chart!. If you decide on the goal being 10 stars, then once they get the 10 stars, give them a treat!

-Have them try a bunch of different veggies, they might find one that they like!Www@FoodAQ@Com

at first i didnt eat vegetable soup so my mom used to blend them in the mixer with potatoes (it's called "potage de legumes " in french i don't know it in english)!. when it's blended you can't know that it's vegetable soup so you tell your kids it's a chicken soup or something like that they will eat it!.Www@FoodAQ@Com

Choose a soup recipe and when made put it through a blender or mixer!.
If you have not got one or cannot afford one, I suggest a stick mixer!.
They are available in New Zealand supermarkets quite reasonable about $15nz!.
If non of these then use a sieve
The idea is to disguise what they are eating!.
You can make a pot then split it up and refrigerate or freeze some of it, give them some as is!.
Next time take some and put in a bit of Curry powder or chilli powder!. You can also add stock powder, chicken or beef, or stock cubes!. To give them different tastes and see which they like best!. Do not overdo the flavourings or too much greenstuff!. Greenstuff sometimes looks yukkie and cabbage often smells!. Once you get them eating soup gradually add some whole cooked veges like peas carrot rings and so on!.
Tell them carrots are good for the eye sight and you never see Rabbits with glasses!.
During the war the Germans could not understand how British pilots were finding them, spies fed the infomation to the Germans that British pilots ate huge amounts of carrots!. The Germans believed it, but in actual fact the British had Radar to find them, and they did not know!.

Do they even like soup!? My kids love veggies but soup is low on their good list!

Thick and chunky is the only way for my kids!. If yours don't go a bunch on veggies, add plenty of flavours they do like!. Maybe even liquidise or mash the soup to "hide" the veggies!.

Try dousing the veggies in butter and pepper!. Or, mix in some cheese sauce with the broccoli!. Even better, add a little hollandaise sauce!

Pretty much, just mix anything that tastes 'good' to them in with the veggies!. Serve them veggies with dip!.!.!.!. do they like ranch dressing!? What do they dip chips in!? Use that for the veggies!.Www@FoodAQ@Com

Not quite sure about the vegie soup!. But you can incorporate vegies Hidden in other foods!. They will never know and you can rest assured they are eating healthy!. Try vegie wraps with flour tortillas ask them what kind of sauce and wrap them up!. It is a winner! Will make any vegie scared kid fall in love! (grin)Www@FoodAQ@Com

OK, here's a way!.

Boil/heat up the veggies when its like, NO TASTE AT ALL!.
That's the trick, like hotpot!. It will just be soggy, but that's the whole point!. No crunchiness no nothing! It's not only good for ur kids but u can have some urself showing a demonstration!.
U practically just make the veggies tasteless, and add some spices and some chicken!.

Try putting in the least yucky vegetables first, then once they get used to those, add a variety!. I heard that it takes 10 tastes of something before a child will enjoy it!.Www@FoodAQ@Com

Just cut them into really small pieces!.
believe it or not, up to this day, I hate "boiled" carrots, so if I'm making soup, I cut them like really small that you can hardly see it, but it's still there!.
You can do the same thing!.
