Margie's Brownies
The Ingredients:
1 cup (2 sticks) butter or margarine, softened
1-1/2 cups sugar
3 eggs
1 teaspoon vanilla
1 cup sifted Swans Down Cake Flour
1/3 cup cocoa
1/2 teaspoon baking powder
1 cup nuts, chopped

Baking Instructions:

FROSTING:
1/4 cup (2 sticks) butter or margarine!., softened
2 1/3 cups confectioners' sugar
1 teaspoon vanilla!.
1/4 cup cocoa!.
5 tablespoons evaporated milk

Preheat oven to 350 degrees!. Cream butter and sugar, add eggs one at a time and mix well!. Add vanilla!. Beat in flour, cocoa and baking power!. Stir in nuts!. Pour batter into greased 9x13x2-inch pan and bake 25 to 30 minutes!. Do not bake longer than 30 minutes!. Cool!. Top with frosting!. Frosting directions: Cream butter, sugar and vanilla!. Beat in cocoa and enough milk to reach desired consistency!.




Mint Chocolate Brownies
The Ingredients:
1 stick (1/2 cup) unsalted butter, cut into pieces
2 ounces unsweetened baking chocolate, chopped
1 cup sugar
2 large eggs
? teaspoon vanilla
? teaspoon mint extract
2/3 cup Swans Down Cake Flour
? teaspoon baking powder
? teaspoon salt

Baking Instructions:

In a double boiler or metal bowl set over a saucepan of simmering water melt butter and chocolate, stirring, until smooth and remove top of double boiler or bowl from heat!. Cool mixture 10 minutes!. Transfer cooled chocolate mixture to a bowl and whisk in sugar!. Whisk in eggs, vanilla, and mint extract until glossy and smooth!. In a small bowl stir together flour, baking powder, and salt and add to chocolate mixture, stirring until just combined!. Spread batter evenly in pan and bake in middle of oven 20 to 25 minutes, or until a tester comes out with a few crumbs adhering to it!. Cool brownies completely in pan on a rack before cutting into 12 squares!. Brownies may be made 2 days ahead, wrapped in plastic and left uncut in pan!. Preheat oven to 350 degrees F!. Butter and flour an 8-inch-square baking pan, knocking out excess flour!.
