What can I make with old bananas?!


Question: What can I make with old bananas!?
At work, we get about a dozen bananas a week and I hate to continue to throw them out when they brown and old!. I know I can make Banana bread and Banana Cream Pie with them, but what else can I make!?

*SOFESOFE FA'I (BAKED RIPE BANANAS IN COCONUT MILK)

12 ripe bananas
1 c!. coconut milk
1/2 c!. brown sugar

Peel bananas!. Slice lengthwise in halves!. Place side by side in a baking pan lined with foil!. Pour coconut milk over bananas!. Sprinkle brown sugar over them!. Bake in preheated oven at 375 degrees for 30 minutes!. Serve warm or cold!.

*RIPE BANANA CAKE

3 c!. sifted flour
1 tsp!. cinnamon
1 tsp!. salt
1 tsp!. baking soda
1 (8 oz!.) can crushed pineapple with juice
2 c!. diced ripe bananas
2 c!. sugar
1 1/2 c!. oil
3 eggs
1 1/2 tsp!. vanilla

Mix all dry ingredients, then sift them together!. Add bananas, oil, pineapple with juice, vanilla, and eggs!. Stir all together!. Do not beat - just blend!. Bake in a greased and floured tube pan at 350 degrees for 1 hour and 20 minutes!. Cool on rack before removing from pan!.

*BANANA BREAD PUDDING

1 loaf day old Italian or French bread
3 eggs
1 scant cup sugar
1 quart milk or half and half
1 1/2 tablespoons vanilla
4 large ripe bananas, mashed
1/2 teaspoon freshly grated nutmeg
1 teaspoon cinnamon, divided in half
1 cup raisins
1/2 teaspoon fresh, finely grated ginger root
2 tablespoons dark rum or banana liqueur

Put the raisins in the rum or liqueur, and warm briefly in the microwave (20-30 seconds)!. Allow to sit at least 30 minutes!. Stir in 1/2 teaspoon cinnamon and mix well!.
Cube the loaf of bread, put it in a bowl with the milk and allow to stand for an hour!.Meanwhile, in a separate bowl, beat together the eggs, sugar, vanilla, and remaining spices!. Mash the bananas and combine all ingredients together!.Turn out into a lightly greased 10X12 or 9X13 inch baking dish and bake at 325 degrees for 70-75 minutes or until edges are golden and toothpick inserted in center comes out nearly clean (same test as for cakes)!.Cool and serve with whipped cream or banana sauce below!.

---Optional Banana Liqueur Sauce:---
1 banana sliced
1 tablespoon butter
1 tablespoon banana liquor
1 tablespoon sugar

Saute sliced banana in butter over high heat for 2 minutes, add sugar and liqueur and remove from heat!. Stir well and serve over banana pudding!. Top with whipped cream!.

*banana caramel dessert

2 bananas, peeled and sliced
1 tablespoon vanilla extract
2 tablespoons melted butter
1 refrigerated can of cinnamon rolls
1 cup caramel topping (similar to sundae toppings)
2-3 cups vanilla ice cream (optional)

Preheat oven to 350°F (175°C)!.In a small bowl, combine bananas, vanilla, and melted butter, until bananas are well coated!. On a cookie sheet, unroll two cinnamon rolls, leaving the two triangles attached to form a square!. Place 1/4 of banana mixture in the center of each pair of rolls!.Bake for 11 to 13 minutes, or until the pastry is golden brown!. Heat the caramel topping and drizzle over dessert!. Serve warm!. It can also be served with a side dish of ice cream if one chooses!.

Peel back a 1 1/2 inch (4cm) wide strip of peel from the inside curve of the banana, leaving one end attached to the banana!.Cut out and remove a wedge-shaped cavity from the length of the banana!.Fill cavity with mini-marshmallows and chocolate chips!.Replace peel and wrap well in heavy duty foil!.Place on coals for about 5 minutes!.Open carefully and eat with a spoon right from the banana peel!.

*Banana-Split Cheesecake

----Crust:----
1 cup packaged chocolate cookie crumbs (such as Oreo)
2 tablespoons sugar
1 tablespoon butter or stick margarine, melted
Cooking spray
--------Filling:----
3 (8-ounce) blocks fat-free cream cheese, softened
1 (8-ounce) block 1/3-less-fat cream cheese, softened
1 (8-ounce) carton low-fat sour cream
1-1/2 cups sugar
1-1/2 cups mashed ripe banana
3 tablespoons all-purpose flour
2 teaspoons vanilla extract
4 large eggs
-- Toppings:--
1/3 cup canned crushed pineapple in juice, drained
1/3 cup strawberry sundae syrup
1/3 cup chocolate syrup
1/4 cup chopped pecans, toasted
16 maraschino cherries, drained

Preheat oven to 325 degrees!.
To prepare crust, combine first 3 ingredients in a bowl; toss with a fork until moist!. Press into bottom of a 9-inch springform pan coated with cooking spray!.
To prepare filling, beat cheeses and sour cream at high speed of a mixer until smooth!. Add 1-1/2 cups sugar, banana, flour, and vanilla; beat well!. Add eggs, 1 at a time; beat well after each addition!.
Pour cheese mixture into prepared pan; bake at 325 degrees for 1 hour and 10 minutes or until almost set!. Cheesecake is done when the center barely moves when pan is touched!. Remove cheesecake from oven; run a knife around outside edge!. Cool cheesecake to room temperature!. Cover and chill forWww@FoodAQ@Com

Frozen Chocolate-Covered Bananas

My mom and I used to make these in the summer time!. They're so easy and delicious!. I don't have a specific recipe, but this is what we do:

Peel the bananas and cut them in half!. Push a popsicle stick into the cut end!. Dip the bananas in the melted chocolate (see note below) and place banana on a cookie sheet lined with wax or parchment paper!. You could do a second dip into the chocolate for a thicker coating or you could roll the banana in whatever you want - crushed oreo cookies, nuts, sprinkles, candy bits, let your imagination run wild! Once you're done dipping/rolling all the bananas and they are on the cookie sheet, but them in the freezer for a few hours!. Once they are solid, you can transport them to a container that seals!.

When melting the chocolate (we use a good semi-sweet dark chocolate to contrast the sweet banana), you can use a double boiler or just melt it in the microwave!. If you are melting it in the microwave, you should stir it every 10-20 seconds!. If it is kind of lumpy and getting smoother, add a little vegetable shortening (1/4 teaspoon or so at a time)!.Www@FoodAQ@Com

Banana pudding!
Take vanilla wafers and cut your bananas into pieces!.Then make some vanilla pudding 2 boxes (the kind you cook),in a large bowl make a palyer of bananas and wafers cover it with pudding then another layer of bannanas and wafers ,more pudding and repeat until the bowl is full cover the top with pudding and wafers and let it chill in the fridge for an hr or so!.

You can make pancakes, You can fry them and buy this light mexican cream to dip them in, (it evens out the sweet taste of the bananna)
You can also make Bananna shake in the morning, My dad would make it for us!.

Just put about 2 banannas in the blender,
add 1 cup of milk
1 raw egg (Optional, but eggs are good source of protein and best breakfast) You cant really taste the egg, its just for healthy purposes!.
Blend this together
Now sprinkle cinnamon powder on the top!.

You can also add ice to it to make it like a smoothie!. which my sisters love!.

You can make bannana and peabut butter sandwhiches too!

You can also make Chocolate covered bannanas!.
Buy the little pack for like a dollar at your local grocery store,
Buy popsicle sticks, and stick them at the end of the bananna
Dip the bananna in chocolate (i usually chop them in half)
Then stick them in the freezer until frozen and ready to eat!.
{those are fun for kids, and make the banannas last a lot longer)Www@FoodAQ@Com

This is going to sound weird, but it's really good!. Fry them (sliced) and serve them with refried beans and sour cream!.

Another thing I like to do is make banana pancakes!. Just make regular pancake batter (or use pancake mix), and add chopped bananas to it!. They're good with peanut butter on top!.Www@FoodAQ@Com

Don't bother trying to freeze them , I am not very big on anything made from bananas except maybe banana bread w/ chopped walnuts or maybe pudding , my wife tends to make this stuff though !.
