How is the best way to cook aubergine?!


Question: How is the best way to cook aubergine!?
I was wanting halloumi redpepper and a large mushroom served with it maybe stacked up!.

Everytime i seem to cook it,it goes really soggy and tastless!.

Aubergine = eggplant, yes!? I think my favorite way is eggplant parmesan!.

Eggplants get soggy when you cook them because they're mostly water!. You can fix this at least a little by slicing them, and then salting the slices and letting them stand for a while (about 30 min)!. The salt will draw out some of the water and help the eggplant firm up somewhat (when you're done, wipe off the salt and the extracted water with paper towels)!.

I kinda think eggplant doesn't have a lot of taste to begin with!. Try cooking it with strongly flavored foods like tomato and garlic!. Red pepper will go a long ways towards adding flavor!.Www@FoodAQ@Com

Aubergine absorbs a lot of oil so it sometimes can taste soggy!. A nice way of cooking it is to slice it lengthways and brush both sides with a little olive oil, then cook it on a hot griddle pan!. You'll get those lovely grill marks as well!. Alternatively bake the slices for 10 minutes at 190C/gas 5!. If you'd like cubes of aubergine, dice into large cubes, and stir fry for 10-15 minutes, adding a little oil to the pan if the aubergine sticks!.

Try to cook with garlic (cut into very small pieces) and Chinese white wine!. You can use one or teaspoonful of Brandy!.

Put oil into a hot frying pan !.!.!.
first put the garlic in it !.!.!.
then add in the aubergine and put the soybean sauce, salt, pepper and sugar!.
cook for about 4 to 5 minutes (it depends how much aubergine)
add in the wine before serving

1!. Cube it and add it to ratatouille!.
2!. Scoop out the middle without damaging the skin!. Mix the flesh with seasoned sauteed minced meat, onions, garlic, diced tomato!. Put the mixture back in the skins, grate cheese over them and pop in the oven!. Put a little stock in the baking dish to prevent them sticking!.
3!. Slice lengthwise and layer up with seasoned minced meat etc!. and top with a cheese bechamel sauce!. Brown under the grill!.
4!. Pop them on the barbecue until soft!. Scrape out the flesh and mix with garlic a little olive oil and your choice of seasonings!. A great vegetarian paté!.Www@FoodAQ@Com

TRY SLICING and put on barbecue,use olive oil and some minced garlic on both sides before placing on grids,the skin on some eggplant is bitter ,some times I cut little sections off!. also they are good to make meatballs,instead of meat use eggplant well minced and deep fry!.They are just Delicious!.Www@FoodAQ@Com

You know I tried to even grill it and still it gets that way!. I even put balsamic vinegar, olive oil with garlic and salt and pepper!. It still tasted like nothing!.!.!.!.!.From what I can see maybe it's a texture type veg!. Kind of like tofu, it takes on flavor but has none of it's own!. Www@FoodAQ@Com
