How do you cook Eggplant (Aubergine) for someone who doesn't like it?!
We got given several tired eggplants which I need to use ASAP, but DH has said before how much he dislikes eggplant!. How can I use them up in a way he will like them!?Www@FoodAQ@Com

cut the eggplant open scoop out the inside!. Chop up eggplant finely Suate in pan with onion bell pepper, and garlic and olive oil!. Add hot italian sausage!. put mixture in a baking dish and cover with mozzarella cheese!. Bake on 350 for about 30 minutes!. Serve over angel hair pasta!. He probably wont notice its in there if you dont tell him!. Did that for my BFWww@FoodAQ@Com
We love this recipe and even make it in the winter when we have to settle for imported eggplants!.
STUFFED EGGPLANT
2 medium eggplants – halved & steamed 10 minutes
? c chopped onion sautéed
1 t salt
? t pepper
? C Parmesan, Asiago or Romano cheese
1 lb meatloaf mix – coarse ground & cooked in 1 T butter
1 egg -- beaten
bread crumbs
Scoop-out eggplants & chop body, combine ingredients except bread crumbs & either refill eggplant shell or form into small individual meat loafs!. Top with bread crumbs!. Bake in 375°F oven for 30 minutes!. Serve with marinara sauce!.
I'd suggest in your case you make the individual meatloafs!. Sometimes, I just throw the mixture into 2 loaf pans and then top with the bread crumbs and bake!. It also freezes very well!.
One reason your husband may not care for it is if you don't peel the skin off!. I always peel the skin (unless I'm steaming it like this recipe)!. The skin can be bitter even when freshly picked from the garden!.
We also love it peeled and then sliced into rings and grilled with a light bbq sauce or just use olive oil!.Www@FoodAQ@Com

Question: How come you're insisting on cooking it for him!? If he doesn't like it and you've tried numerous recipes, then he simply doesn't like it! If you like eggplant, then make it for yourself and let him off the hook!.

10 Thin slices of eggplant, peeled and salted!. Allow to "sweat" for 30 minutes!. Rinse and pat dry!.
2 T Maille Dijon Mustard
5 thin slices Asiago cheese
Spread each slice of eggplant with some of the dijon mustard!. Top 5 slices with the cheese!. Top the cheese with the 5 remaining slices!. Place in 450 degree oven to bake until golden and cheese melts, or place in greased panini pan!. Serve warm and cut in half if slices are large!.Www@FoodAQ@Com
