How do I get twelve pounds of yellow wax beans ready for the freezer?!
I've just picked them this morning!.Www@FoodAQ@Com
Answers:
Wash them, and then blanch them!.
Break them into small pieces, removing the tips at the end!. Boil them in water for approximately 2 minutes!. Then, place them in ice water (and I literally mean cold water with ice cubes floating in it) to instantly stop them from cooking!. Leave them there for a bit, and then take them out to dry!. Put them in freezer bags, and freeze them!.
Make sure you dry them, otherwise ice crystals will form on them in the freezer from the water still on them!Www@FoodAQ@Com

You want to wash them first, then blanch them, Blanching means to put into boiling water for about 90 seconds, then into ice water until cooled!. Then you can put them into freezer bags in the amounts you want!.
Do the blanching in small batches so that the boiling water does not stop boiling for long!.Www@FoodAQ@Com

wash, break off stem end, snap into size you want them (if desired), blanch for 1-2 minutes in salted water (in batches, obviously), cool, put into freezer bags, remove as much air as possible, freeze!.Www@FoodAQ@Com
