Martha Stewart's 3 ingredient fettuccine Alfredo is really good, lots of butter and cheese so I use it as a side dish!. Another recipe that looks tasty is Chicken and Broccoli Alfredo!.


3 ingredient fettuccine Alfredo

Ingredients
2 sticks butter
1/2 pound grated Parmesan cheese, plus more for serving
Salt to taste
1 pound fettuccine

Directions

Using an electric mixer, beat butter and Parmesan until creamy!.
In a large pot of boiling salted water, cook fettuccine according to package instructions until al dente, about 12 minutes!.
Reserve about 1/2 cup of cooking water; drain pasta!.
Return fettuccine to warm pot!.
Toss pasta with 1/2 teaspoon salt, cheese mixture, and 1/4 cup of the pasta water!.
Add more pasta water, as needed!.
Serve with additional cheese!.

Chicken and Broccoli Alfredo

Ingredients

6 oz whole wheat fettuccine, uncooked
1 cup broccoli flowerets
1 tsp light butter
6 oz boneless chicken breast halves cut into cubes
1 can (10!.75 oz) 98% fat free cream of mushroom soup
1/2 cup skim milk
1/3 cup grated parmesan cheese

Directions

Prepare fettuccine according to package directions!. Add broccoli the last 4 minutes of cooking!. Drain wel!. In skillet over medium high melt butter, add chicken and cook until browned, stirring often!. Stir in soup, milk, cheese and fettuccine mixture and cook thoroughly!. Stir occasionally!.

Olive Garden Alfredo Fettuccine
1 pint heavy cream
1 stick (1/2 cup) butter
2 tablespoons cream cheese
1/2 - 3/4 cup Parmesan cheese
1 teaspoon garlic powder, add in more to suit your taste if you prefer
Salt and pepper, to taste
8 ounces fettuccine, cooked and drained

In a saucepan combine butter, heavy cream, and cream cheese!. Simmer this until all is melted, and mixed well!. Add the Parmesan cheese and garlic powder!. Simmer this for 15 - 20 minutes over low heat!.

Toss pasta lightly with sauce, coating well!. Leftovers freeze well!.

1 package (16 ounces) uncooked fettuccine
2 tablespoons olive or vegetable oil
2 tablespoons butter or margarine
4 medium green onions, chopped ( 1/4 cup)
1 tablespoon chopped fresh parsley
1/2 cup ricotta cheese
1/2 cup crumbled feta cheese (2 ounces)
3/4 cup shredded Asiago cheese (3 ounces)
3/4 cup freshly grated or shredded Parmesan cheese
1/2 teaspoon pepper
Chopped fresh parsley, if desired


1!. Cook and drain fettuccine as directed on package!.
2!. Meanwhile, in 12-inch skillet, heat oil and butter over medium heat!. Cook onions and 1 tablespoon parsley in oil mixture about 4 minutes, stirring occasionally, until onions are tender!.
3!. Stir in ricotta and feta cheeses; reduce heat to low!. Cook about 2 minutes, stirring frequently, until cheeses are melted!.
4!. Add fettuccine, Asiago and Parmesan cheeses and pepper to mixture in skillet!. Cook about 4 minutes, tossing gently, until cheeses are melted and fettuccine is evenly coated!. Sprinkle with parsley!.
