Hi, Emma!

I roast sliced potatoes in foil using olive oil! I just cut 6 - 8 yellow potatoes, unpeeled, into 3/8" thick round slices and toss them in a bowl with a diced onion, olive oil, salt, and pepper!. Then I dump them onto a generous sheet of heavy aluminum foil and fold the foil in half over them!. I seal the foil to make a flat pouch and bake it on the middle rack of a 450-degree oven for about 40 minutes!.

My family likes to dip the potatoes in Ranch dressing!Www@FoodAQ@Com

This is my favourite ways to make them!.

ROAST POTATOES: CRUNCHY
potatoes
butter
salt and pepper
Boil peeled potatoes in large pot of salted boiling water for 5-10 mins until they are just soft on the outside!.
Drain well and return to pot!.
Add a knob of butter to the pot and generously sprinkle with salt (preferably sea salt)!. Place the lid on the pot and shake vigorously!.
The butter and salt should combine with the potato to create a light "mash" around each potato!.
Place in pre-heated oven 180C for 20-35 minutes!.

OK, try this one:
1!. Wash whole potatoes (with skin)
2!. Bring pot of water to a boil
3!. Add whole potatoes!.
4!. When potatoes are cooked, remove potato and peel the skin off
5!. Put some oil (about a few pot spoons) to heat up in frying pan, cut ( cleaned boiled potatoes) in halves and place into hot oil
6!. Potatoes are ready when brown on both sides!.

Olive oil does not cook well at high temps!.
Par boil 10 min's Maris Piper or King Edwards no others will do!.
The tastiest way to cook them is in duck or goose fat!.
But put sunflower oil into your dish that you will cook the roasties!.Put this into the oven until hot!.Drain well giving them a good shake in the pan!.Then into hot dish & oil!.
Into hot oven for approx 1 hr keep turning them until nice & crispy!.
