'Apricot chicken' is great because it soaks in and tastes fabulous with chicken breasts!! It's really easy aswell

Here's a great recipe:

Ingredients

2 tbsps vegetable oil !.
1 c French dressing or Russian salad dressing !.
black pepper !.
1 c apricot preserves !.
1 tbsp garlic (or to taste) !.
6 boneless skinless chicken breasts !.
1 (1 oz) package dry onion soup mix !.
1 tbsp butter

Directions

Step #1 Set oven to 350 degrees!.
Step #2 Grease a 13 x 9-inch baking dish!.
Step #3 Heat oil with butter in a skillet over medium-high heat!.
Step #4 Spice up the chicken with black pepper (do not use any salt)!.
Step #5 Brown chicken about 4 mins on both sides or until lightly browned, then place this into prepared baking dish (if using skin on chicken pieces then place skin-side up)!.
Step #6 In a bowl mix the preserves with dressing, onion soup & garlic until mixed; pour over the chicken in the baking dish then turn the chicken to coat evenly in the sauce!.
Step #7 Bake uncovered for about 30 mins (if you did not brown the chicken increase baking time slightly)!.
Step #8 Serve with rice!.

I always braise them!. Sear them with your seasonings, as if you were going to pan fry them!. Then add some stock, not much, just enough to barely cover the breasts, then just cook it the rest of the way!.

Of you can bake them raw with stock in the pan for the same effect!.Www@FoodAQ@Com

chicken with cream of mushroom and rice or a casserole!. you cam also soak chicken in water then inject some seasonings and bake half the instructed tie then cover in BBQ sauce and continue cooking!.Www@FoodAQ@Com

Soak them in Italian dressing and worchestire (sp) sauce - let them marinate over night and either bake or cook on the grill, its quick and easy and keeps them from drying outWww@FoodAQ@Com
