How the heck does Emeril expect me to get squid ink for this recipe? ?!
Am I supposed to go scare one and capture the ink he squirts with a little tiny cap then bring it back and flavor my rice!?
It reminds me of the Far Side cartoon where one spider scares the other and there is a pile of web behind the scared one and the scary one with the bag on his head says, "Ha! Scared the web out of you!"Www@FoodAQ@Com

When you purchase whole frozen squid or calamari the ink sac is included, usually that is cut off for food service!. You can collect the "ink" for use in a sauce, rice or pasta!. From my own experience I find that you'll get gray rice and some flavor but I'm not sure it's worth the trade offWww@FoodAQ@Com
