Question: Good Rice Pudding Recipe!?
I need a really good rice pudding recipe to make my boyfriend, when he comes down in October!. He was joking around the other day, saying how he would love a wife who could make a really good rice pudding!. So I though I'd get a recipe and practice, so I can make him some in October!.

BEST CREAMY, EASY RICE PUDDING!

3 cups water
1/4 teaspoon salt
1 1/2 cups white rice
4 cups 1% milk
2 cups half & half
2 whole eggs
4 egg whites
1 teaspoon vanilla
1/4 teaspoon salt

Bring 3 cups water and 1/4 teaspoon salt to boil in a 4 quart pot, stir in 1 1/2 cups rice!. Cover and simmer until water is absorbed, about 15 minutes!.
Stir in 4 cups milk, 2 cups half and half, 1 1/2 cups sugar and heat up until steamy (stirring continuously) then reduce to low heat, cover, until mixture looks like thick soup, about 1 hour!.

Whisk 2 eggs, 4 egg whites, 1 tablespoon vanilla, and 1/4 teaspoon salt in separate bowl then add to rice mixture!. Do not let boil; stir about 1-2 minutes on low heat so temperature reaches 160-170 degrees!. Remove from heat, may optionally add 2/3 cup raisins!.

Place rice pudding into Tupperware, cover surface with plastic wrap (adds to creaminess and prevents thick surface), cool about an 1 hour!.

Sprinkle servings with generous amounts of cinnamon as option!.

Makes 3 quarts!.

Creamy Rice Pudding

6 cups milk
3/4 cup uncooked long grain rice (not instant-type rice)
1 cup whipping cream (I often just use Half & Half 10% cream, as I always have it on hand)
3/4 cup sugar
3 egg yolks, beaten
2 tsp!. vanilla
1/4 tsp!. salt
(optional) 1 tsp!. cinnamon (to sprinkle on top)
(optional) raisins, to taste

method
Rinse a large saucepan with cold water and pat dry!.

Pour in milk and bring to a boil over medium heat!. *Watch carefully!. When it hits the boil it can very quickly boil up and over and make an awful mess! Stir in rice and return to a boil!. Reduce heat and simmer uncovered, stirring occasionally, about 55 minutes or until the rice is tender (taste test the rice to be sure and cook longer if needed)!.

Meanwhile, in a small bowl, combine the rest of the ingredients (sugar, cream, egg yolks, vanilla and salt)!. When the rice is cooked, remove from heat!. Whisk a small amount of the pudding into the egg yolks mixture, stir, then add the yolk mixture into the pudding!. Cook only long enough to just bring back to a boil!. Remove from heat, cool slightly and put into a covered casserole dish or bowl!. Sprinkle with cinnamon, if desired!. Refrigerate!. Enjoy, this is the best!.

I don't really have a proper recipe, but I do this!.

Grease a casserole dish, add 3/4 cup rice, half cup sugar, 4 cups milk and a small tin of coconut cream/milk (180ml) as well!.
Cook in oven at 180 degrees C for about 45 minutes!.
Can check while cooking that rice is not drying out too much!.

The coconut milk gives it a coconut flavour which enhances the recipe!. Easy as to do!. Www@FoodAQ@Com

Rice Pudding with Raisins
Things You’ll Need:

* 2 1/2 cups milk
* 1/3 cup rice (uncooked)
* 1/8 tsp!. salt
* 1 egg
* 1/4 cup dark brown sugar
* 1 tsp vanilla extract
* 1/4 tsp!. cinnamon
* 1/3 cup raisins
* 1 large pot
* 1 small bowl
* 1 whisk
* 1 large spoon

Step1
In a medium heavy bottomed saucepan, combine milk, rice and salt and bring to a boil over high heat!.
Step2
Reduce heat to low and simmer until the rice is tender, about 20 minutes
Step3
Stir!. Do not let rice stick to the bottom of the pan!.
Step4
In a small mixing bowl, beat together egg and brown sugar!. Mix well!.Add a half cup of the rice mixture, a little at a time!. Mix well
Step5
Pour egg mixture back into the saucepan of rice and milk and stir!. Turn to low heat, cook for 10 minutes or so, until thickened!. Do not have the mixture come to a boil at this point!.
Step6
Stir in the vanilla!. Remove from heat and stir in the raisins and cinnamon!.Serve!.

Vegan Rice Pudding
Things You’ll Need:

* 2 cups cold water
* 1 cup organic brown rice
* 1 1/2 cups vanilla soy milk
* 1/3 cup raisins
* 1/3 cup maple syrup
* 1 tsp!. vanilla
* 1/2 tsp!. cinnamon
* 1/4 tsp!. ground ginger
* 1/8 tsp!. ground nutmeg

Step1
Prepare the rice!. Boil the water in a medium saucepan; and add the rice!. Bring to a boil and cover for 1 minute to cook rapidly!.
Step2
Reduce heat to simmering and cook for 35-40 minutes until water disappears and rice is cooked completely!.
Step3
Increase heat to medium!. Stir in the milk, raisins, maple syrup, vanilla, and spices!. Continue cooking until all liquid is absorbed, then remove from heat!.
Step4
Prepare to chill the pudding!. Pour the mixture into medium sized bowl and cover!. Refrigerate at least 4 hours, preferably overnight!.
Step5
Scoop into serving bowls, and enjoy!

My Moms Rice Pudding
Things You’ll Need:

* 1 1/2 cups short grain rice
* 1 cup brown sugar
* 1 1/2 tsp salt
* 1oz piece of fresh crushed ginger
* 1 cinnamon stick,cut
* into 4 pieces
* 1 tspn whole cloves
* 2 tblspn butter
* 1 14oz can of coconut milk
* 4 cups water
* 1/2 cup raisins/soaked in dark rum or brandy
* 1/4 cup of grape juice
* ground cinnamon to garnish

Step1
For best results, soak rice in water for 1 hours prior to cooking; Drain
Step2
In a large heavy saucepan add three cups of water salt and spices, bring to a boil!. Sieve through a colander, bring to a boil again and add rice, milk and sugar!. Cook covered over medium heat for about 20 minutes, remove from heat add butter, raisins and grape juice!. Continue to cook approximately 15 min uncovered or until rice has absorb the water!.
Step3
Pour into individual serving dishes or a square serving dish, let cool and garnish with cinnamon!.

Caramelized rice pudding with apricots
Things You’ll Need:

* 2 1/2 oz short grain rice
* 7 oz confectioner's sugar
* 2 vanilla pods, 1 split in half lengthways
* 1 oz unsalted butter
* 2 1/2 cups full-fat milk
* 5 oz carton heavy cream
* 2 strips lemon rind and juice of 1 lemon
* 9 oz ready-to-eat dried apricoyts
* 1-2 tbsp orange liqueur, such as Cointreau

Step1
Place the rice into a saucepan, cover with water and boil for 5 minutes!. Drain!. Return the rice to the pan with 1 1/2 oz of the sugar, the split vanilla pod, butter and milk!. Simmer for 45-60 minutes, stirring often, until thickened!. Transfer to a bowl and cool for 20 minutes!. Remove the vanilla pod and scrape the seeds into the rice!. Discard the pod!. Whisk the cream until it forms soft peaks, then fold into the rice!.
Step2
meanwhile, place 3 1/2 oz of the sugar into a saucepan with the lemon strips, remaining vanilla pod and 7 fl oz of water!. Heat, stirring, for 3 minutes or until the sugar dissolves!. Add the apricots and cook for 20 minutes to reduce the syrup!.
Step3
Place the apricots into 4 ramekins, add the lemon juice, liqueur and syrup, then cool for 5 minutes!. Top with rice pudding, then refrigerate for 1 hour!. Preheat the boiler to high!. Sprinkle the puddings with the rest of the sugat!. Broiler for 1-2 minutes, until the sugar caramelizes, then cool for a few minutes!.

Rice Pudding with Dried Cranberries
Things You’ll Need:

* 2 cups cooked rice, white or brown
* 1/2 cup white sugar
* 2 eggs, slightly beaten
* 2 cups whole or 2% milk
* 1/2 tsp!. vanilla
* 1/4 cup sweetned dried cranberries
* 1/2 tsp!. powdered cinnamon
* 1/4 tsp!. powdered ginger

Step1
Cook rice if you don't have any left over!. Don't add any butter or oil to the rice when cooking!. Let cool!.
Step2
Preheat oven to 350 degrees!.
