yes you can use mayo!. I bake all the time and have done this in a pinch!.

just put in the same amount of mayo that the recipe asks you to use for the oil!. just make sure it's not flavored mayo (olive oil type,etc)!.

~~MAYONNAISE CAKE

Cake:
1 c!. seedless raisins
1 tsp!. soda
1 c!. boiling water
2 eggs (yolks)
Mayonnaise
1 c!. sugar
2 c!. all-purpose flour, sifted
1 c!. chopped pecans

Frosting:
1 1/2 c!. light brown sugar
2 egg whites
1/3 c!. water
1 tsp!. vanilla
Pinch of salt
Save 1 c!. chopped pecans

Put first 3 ingredients into large bowl and let stand until lukewarm!. Into bottom of measuring cup put 2 egg yolks then fill to 3/4 cup level with mayonnaise!. Add this to raisin mixture!. Add sugar, sifted flour, chopped pecans!. Mix well and pour into 3 (9 inch) pans!. Bake at 350 degrees for 25 minutes!. Will be dark brown when cooked!.

Cook frosting ingredients 7 minutes in double boiler, whipping steadily!. Then add pecans and frost cake!.

~~CHOCOLATE MAYONNAISE CAKE
W/FROSTING

2 c!. flour, unsifted
2/3 c!. unsweetened cocoa
1 1/4 tsp!. baking soda
1/4 tsp!. baking powder
3 eggs
1 2/3 c!. less 1 tbsp!. sugar
1 tsp!. vanilla
1 c!. mayonnaise
1 1/3 c!. water

Grease and flour two 9 inch pans!. In medium bowl mix flour, cocoa, soda and powder!. In large bowl mix on high eggs, sugar and vanilla for 3 minutes or until light and fluffy, scraping occasionally!. Reduce to low and beat in mayonnaise until blended!.

Add flour mixture alternately with water!. Begin and end with flour (add flour in 4 parts)!. Pour into prepared pan!. Bake at 350 degrees for 30 minutes or until pick comes out clean!. Cool 10 minutes!. Remove from pan!.

Choco Frosting:
1/3 c!. butter, melted
1/3 c!. cocoa
1/2 tsp!. vanilla
2 c!. powdered sugar
2 tbsp!. milk (more as needed)

Whisk together butter and cocoa!. Add vanilla!. Mix in powdered sugar gradually and alternately with milk!. Frost cool cake!.Www@FoodAQ@Com

The mayo might work, but it could also make the cake taste different!. If you have some unsalted butter you could melt it and use it in place of the oil!. You could also try melting some Crisco if you have some of that!.

mayo is salty and it is made up of eggs!. use fresh cream instead!. the texture of the cake would be fabulous!. i would not recommend mayo!.Www@FoodAQ@Com

Why are you using oil!? Is it an instant cake!? Anyway, you can use butter or margarine as a substitute!. I would not use Mayonnaise!.Www@FoodAQ@Com
