Question: Anyone have a recipe for salmon!?
I was planning to grill salmon for dinner, but it's storming!. I never add anything to the fish when I make it outside, but it doesn't taste the same when baked plain in an oven!. What's a good way to season my salmon!?Www@FoodAQ@Com

I hate the maple glazes!. My favorite is a citrus grill!. Just use one from Tone's, Durkee or Mc Cormick!. If you don't have that on hand- go with lemon pepper!. Www@FoodAQ@Com

GINGER-GLAZED SALMON STEAK

Ginger Glaze:

2 tablespoons grated fresh ginger
2 tablespoons minced garlic
2 tablespoons minced scallion, white part only
2 tablespoons chopped cilantro
1 tablespoon hot chili paste
1/2 cup rice wine vinegar
1/4 cup Mirin (Japanese rice wine) or dry sherry
2 tablespoons hoisin sauce
1/2 cup chicken stock
1 tablespoon vegetable oil
4 7-ounces salmon steaks
Salt
Fried basil leaves, for garnish
Basil mashed potatoes
Sesame asparagus

Preheat oven to 450 degrees!.
Make glaze: In a small saucepan combine all ingredients and bring to a boil!. Simmer 30 seconds and remove from heat!. Cool to room temperature!.

Heat oil in a heavy-bottomed, ovenproof skillet until smoking!. Season salmon with salt!. Sear first sides until golden brown!. Turn steaks and roast in oven for 3 minutes!. Brush with Ginger Glaze!. Roast for 1 minute more!. Serve with potatoes and asparagus, garnished with basil leaves!.

Makes 4 servings!.

Salmon Filet with Mango Cilantro Salsa:

4 6-ounce portions salmon filet

Mango Cilantro Salsa:

1 ripe mango, peeled and ?-inch diced
? cup chopped scallion, green part only
? cup diced red bell pepper
1 tablespoon finely diced fresh jalapeno
1 tablespoon chopped fresh cilantro
1 small clove garlic, minced
1 tablespoon freshly squeezed lime juice
? teaspoon salt
? teaspoon extra-virgin olive oil

Bake salmon filet at 400oF for 15 to 20 minutes, depending on the thickness of the salmon!. For Mango Cilantro Salsa, lightly toss all ingredients in bowl!. Chill in refrigerator for at least 1 hour for flavors to meld!. Serve salsa as an accompaniment to salmon!. Mango Cilantro Salsa also goes nicely with grilled meat or chicken!.
Yield: 4 servings

PARMESAN COATED SALMON

1 lb!. salmon filet
salt
pepper
dill weed
paprika
grated Parmesan cheese

Remove skin from salmon filet!. With a sharp knife, remove grey colored fat from skin side of filet!. Cut into 3 or 4 pieces, place on sheet of tin foil or paper!. Salt and pepper the filets!. Sprinkle with dill weed on both sides!. Dust with paprika!. Coat thoroughly with Parmesan cheese and pat cheese to make it adhere well!.
Place about 1/8 inch of olive or granola oil in large frying pan over medium heat!. When oil is hot, add filets!. Brown on both sides!. Let filets cook until brown (about three minutes) and turn!. Don't move filets around in pan until brown on one side before turning!. This helps the cheese adhere!.

Do not over-cook or salmon will get dry and hard!.

Serves two or three people

Simple, tastes great and no mess recipe!.

Lightly season the salmon with salt and pepper!.
Pour a little oil on a large piece of foil and add a few pats of butter!.
Lay the salmon on the foil and fold the edges to cover it completely!.
Bake at 350 till done (depends on size of salmon)!.

Serve with lemon and soy sauce!.

Fine cut some red and yellow peppers and salt and pepper your salmon!. Get some aluminum foil and put peppers first with salmon on top with lemon slices on top!. Add a little olive oil and bake at 350 for about 15 to 20 minutes!.Www@FoodAQ@Com

It has soy sauce, brown sugar, etc!.!.!.!.its pretty good!. I liked it!.

mix some honey and dijon mustard brush liberally on the salmon add salt and pepper wrap them in some foil packages and bake in the oven until done!. Www@FoodAQ@Com
