Answers:
1 x Packet Unibic Sponge Fingers (they're usually in the biscuit aisle)
3 x eggs (separated)
1 x packet Marscapone (I use the Tatua one)
about 1/4 cup of castor sugar
1 cup of really strong coffee
Coffee Liqueur (something like Kahlua/Tia Maria) / Marsala Wine / Brandy
Whip the egg whites until you can hold the bowl upside down without them falling out (seriously)
In a separate bowl (make it a big bowl too), whip the castor sugar and egg yolks until they are really pale (take a few minutes with an electric mixer on full)!.
Add the marscapone to the egg yolk/sugar mix, and whip until its real light and fluffy!. Add maybe a shot of the alcohol (and some coffee if you want) into this mixture and stir through!. Get your egg whites and fold these through carefully - don't be too rough otherwise they'll lose all their air!.
In another dish, mix the coffee and your alcohol!. Dip your sponge fingers in the mix(for about two seconds) and then place them in a single layer in a square serving dish!.
Put about half your egg/cream mix on top of the sponge fingers!.
Make another layer of sponge fingers on top of the egg/cream mix (don't forget to dip them in the coffee alcohol mix first), then put the rest of the egg/cream mixture in a layer on top!.
Sprinkle either cocoa (if you want it to be less sickly sweet) or grated chocolate on top (if sickly sweet is exactly what you are after)!.
Its best if you leave it in the fridge overnight, so the sponge fingers can soak up all the flavour and go all soft!.

Tiramisu
*6 egg yolks
3 tablespoons sugar
1 pound mascarpone cheese
1 1/2 cups strong espresso, cooled
2 teaspoons dark rum
24 packaged ladyfingers
1/2 cup bittersweet chocolate shavings, for garnish
In a large bowl, using an electric mixer with whisk attachment, beat egg yolks and sugar until thick and pale, about 5 minutes!. Add mascarpone cheese and beat until smooth!. Add 1 tablespoon of espresso and mix until thoroughly combined!.
In a small shallow dish, add remaining espresso and rum!. Dip each ladyfinger into espresso for only 5 seconds!. Letting the ladyfingers soak too long will cause them to fall apart!. Place the soaked ladyfinger on the bottom of a 13 by 9 inch baking dish, breaking them in half if necessary in order to fit the bottom!.
Spread evenly 1/2 of the mascarpone mixture over the ladyfingers!. Arrange another layer of soaked ladyfingers and top with remaining mascarpone mixture!.
Cover tiramisu with plastic wrap and refrigerate for at least 2 hours, up to 8 hours!.
Before serving, sprinkle with chocolate shavings!.Www@FoodAQ@Com
