Do you know of any meals suitable for vegan teenagers?!


Question: Do you know of any meals suitable for vegan teenagers!?
The meal is for an assessment item, we have to prepare a two course meal that will cater for the nutritional needs of a group of teenagers, within the group there is a vegan, someone who does regular exercise and another that does no excerise!. Another thing, i have to be able to demonstrate a high level of cooking skills while making it!. Any ideas of entrees, mains or desserts!?Www@FoodAQ@Com

I'm strictly vegetarian and in the process of transitioning to veganism!.!.!. I made a vegan enchilada casserole a while back, and it was a big hit!.

Basically, you just want to layer a bake pan (really whatever size you'd like!.!.!. I use 9x13 in) with all the ingredients after spraying it with non-stick spray!.

Use corn tortillas to cover the bottom, then add layers of vegetarian refried beans, black beans, corn, sliced tomatoes, and some sauteed/grilled bell peppers/onions/jalapenos!. Cover that with a layer of salsa, then another layer of corn tortillas, then all the layers again!. Top with a final layer of tortillas, and cover the top with enchilada sauce and some sliced olives!. Cover it with some tin foil and pop it in the oven at 375 degrees for 30-40 minutes, or until hot throughout!. Let it cool for about 10 minutes, and voila!

It's great nutritionally!.!.!. incredibly low-fat, plenty of protein in the beans, all your veggies, and wonderfully vegan! Plus it's pretty easy!. Other than the sauteed vegetables, you really just have to put it all together in the pan!.!.!. and it tastes great!

and what about a nice salad first or something!? Plenty of oil (rather than dairy) based dressings are vegan

as for dessert, you can probably find some better ideas online, but one simple vegan thing I like to do is to buy pitted dates, stuff them with raw almonds, coat them in honey and then roll them in fresh coconut or coconut flakes!. I'm 18, but I know some teenagers might not be thrilled with dates for dessert!.!.!. though I promise they're yummy!.

for an entree you could get some tomatoes and cut out the middle then stuff it with other vegetables and cook in the oven till it's nice and warm!. Main you could serve vegetable spring rolls and some vegetable tempura!. If none of this helps try these sites:
